Optional – If you want to make bread machine banana nut bread, you can add 3/4 cup of chopped walnuts to this recipe after the first bread machine mixing cycle and before the second mixing (final mixing). I like to add the chopped walnuts after the first mixing and before the final (second) mixing in order to minimize any mixing “breakage” of the chopped walnuts.

I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them.

This is a delicious and super easy way to bake banana bread. I used my Oster brand bread machine on the quick setting and it baked the bread perfectly. About halfway through the baking time I sprinkled some chocolate chips and nuts on top to make it look pretty. Next time I’m going to try using brown sugar instead. I think that would provide a bit of extra flavor and moisture to the loaf.

Tbh i thought reading the recipe they accidentally forgot to put oil on there. In all the other recipes i have done has about a 1/4 cup of either oil or softened butter. I added it anyways before venturing down to the comment sections when i put it in the machine.

I suspect that is why the chocolate chips melted. My loaf was underdone and caved in the middle. As if a hunk of mashed banana didn’t mix completely. I’m really assuming the castropy happened because of the bread machine. It did smell amazing while cooking. I wanted to throw my loaf out as well but hate wasting food. Simply; I gave it to someone else. Made it again the old fashioned way… In the oven. Better result.

Thank you for the recipe! I made the bread using bread flour in my cuisinart cbk-110. I followed the recipe as is except omitted walnuts. I also used ripe bananas. I feel that I could have used another banana or banana flavored syrup to give it more flavoring. Also, definitely going to double up on the chocolate chips. On the machine, instead of rapid cycle, I used “cake” program which goes just at 1hr 52 mins. I had to add another 30 mins. Cooled it on wire rack for 2 hours and it was still pretty warm on the inside. Made few slices of half of the loaf and 3 hours later, sliced the rest of the loaf. It wasn’t dry at all. If I double up on chocolate chips and add extra banana, do I need to make any changes to the recipe?


Ok, this bread turned out so yummy…. however, my machine doesn’t work like most I guess. It’s a very basic West Bend one and has very few options. So I followed the recipe (except I didn’t have the walnuts so it got double chocolate chips!) and it ran through the rapid cycle which took 3 hrs on my machine. But it was still dough inside. So I baked it for another 25 mins at 400. I’ve decided that I’m still going to use this recipe for baking the bread though. It was so good.

I have to think that people perhaps make alterations to the recipe or don’t follow the instructions (even if they *think* they did). I know I have a winning recipe on my hands when my husband and 3 year old start snacking on it as soon as its cool enough to handle and immediatly ask me to make it again soon. This bread turned out so well, just like a cinnamon roll in loaf form. I don't have a bread machine so I did have to adjust the directions for use in my stand mixer. I combined the white sugar and warm milk in my mixer bowl and added the yeast to proof. Once proofed I mixed in the eggs and softened butter until the butter was broken up into chunks and the eggs were mixed in. I then added the flour/salt that had already been mixed to combine. I let the dough hook do all the kneading and when finished I lightly oiled the bowl and the top of the dough, covered with plastic wrap and let it rise until doubled. From that point on I followed the recipe except for doubling the sugar/cinnamon part of the filling. I made one loaf with walnuts and one without since my husband isn't crazy about them. We can't wait to try this bread toasted tomorrow morning. The only change I'll make next time is to brush the dough with an egg wash before baking so it comes out nice and glossy. Highly recommend! Please mash the ripe bananas with a fork before adding them to the bread pan. Ripe bananas are soft and are very easy to mash. Most bread machine paddles/mixers will not mash large banana chunks properly (just stirs them around) and the banana bread will not come out correctly if you have not mashed the bananas. Thanks Tom for pointing out the problem with large chunks!
This cinnamon bread is excellent. I followed the recipe ingredients but made rolls instead of a loaf and added raisins. I LOVE the filling so I doubled the ingredients to satisfy my sweet tooth and I'm glad I did because to my liking there was barely enough to cover both rectangles. I added 1 cup Thomson raisins, soaked for 30 min. in 1/4 cup brandy with a 1/4 tsp sugar sprinkled over them (kills the bitterness) stirring a few times to coat them evenly. The dough is great to work with and not sticky at all. When I sprinkled the raisins over the sugar mix I put a sheet of wax paper to cover it and ran the rolling pin over it lightly a few times to press the mixture into the dough (makes rolling it up easier and less filling leaks out). I rolled it up from the long end and sliced it into 1" pieces and popped them into Pam-sprayed muffin tins. I always brush my rolls with soft butter and sprinkle a little brown sugar over them, about 1/8 tsp on each (to keep some yummy, gooey syrup on the tops). It only took 15 min to turn golden with syrup spread over the tops.Even though I doubled the filling very little of it leaked out. I lifted each to a rack and while still warm I drizzled the tops with basic milk/icing sugar glaze. When they cooled I drizzled a 2nd layer of glaze over the tops as it will not soak into the roll and disappear. Then I ate 4 of them! My goodness, this beautiful bread makes accidental rolls a great mistake. Thank you MN Nice for sharing.
I got a bread machine for Christmas and this is ALWAYS my go-to black banana recipe!! My quick bread setting is 1hr 43min so I make it the night before and it’s ready for breakfast in the morning. My kids are always thrilled. I do reduce the sugar to 1/3c and use half whole wheat flour (no walnuts) to try for a more wholesome recipe and it’s just as good!! <3

I have made this bread several times. The results have been great each time, and it taste just like a cake. I’ve received positive reviews about this bread from others. My only suggestion is to add the chips after the liquid ingredients, as they melted when I added them with the dry ingredients the first time I made this bread. The bread came out dark, but it was still good.
