I have used this same recipe for years, except I use 3 Tablespoons of oil instead of the melted butter. I am going to try the butter once and see if I like it better. One thing for the person who thought the bread was tasteless is make sure you are using ripe bananas, the blacker the better! I have an Oster machine and it does not have a quick bread setting. What I do is use the dough setting and mix for 5 minutes using a rubber spatula to get the flour off the sides of the pan, and then press bake and bake it for about an hour and ten minutes.I then take the pan out of the machine and let the bread set for about 10 minutes before taking it out of the pan. I have made at least 100 loaves of this bread and everyone loves it!

I added another egg and about 1/4 cup of olive oil and it came out awesome. I read some of the comments about it being dry. Tbh i thought reading the recipe they accidentally forgot to put oil on there. In all the other recipes i have done has about a 1/4 cup of either oil or softened butter. I added it anyways before venturing down to the comment sections when i put it in the machine.
Making this right now in my Hamilton Beach model# 29882 machine. Luckily I was watching as it starting mixing because the egg/banana/milk slurry was just spinning in the center while most of the flour was staying put on the edges! I helped it along with a rubber spatula and it mixed just fine, but seems awfully wet. The baking cycle is beginning now… Fingeres crossed!

Same thing happened to my first loaf. I thought I had done something wrong. I suspect bread machines vary. Mine heats while the ingredients are mixing. I suspect that is why the chocolate chips melted. My loaf was underdone and caved in the middle. As if a hunk of mashed banana didn’t mix completely. I’m really assuming the castropy happened because of the bread machine. It did smell amazing while cooking. I wanted to throw my loaf out as well but hate wasting food. Simply; I gave it to someone else. Made it again the old fashioned way… In the oven. Better result.

Thank you for the recipe! I made the bread using bread flour in my cuisinart cbk-110. I followed the recipe as is except omitted walnuts. I also used ripe bananas. I feel that I could have used another banana or banana flavored syrup to give it more flavoring. Also, definitely going to double up on the chocolate chips. On the machine, instead of rapid cycle, I used “cake” program which goes just at 1hr 52 mins. I had to add another 30 mins. Cooled it on wire rack for 2 hours and it was still pretty warm on the inside. Made few slices of half of the loaf and 3 hours later, sliced the rest of the loaf. It wasn’t dry at all. If I double up on chocolate chips and add extra banana, do I need to make any changes to the recipe?

I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them.

Bake loaves in the preheated oven until lightly golden brown and bread sounds hollow when tapped, about 30 minutes. If loaves brown too quickly, lightly cover with aluminum foil for the last 10 minutes of baking. Let bread cool for 10 minutes before removing to finish cooling on wire racks. Sprinkle tops of each loaf with 1 teaspoon confectioners' sugar.
This is a delicious and super easy way to bake banana bread. I used my Oster brand bread machine on the quick setting and it baked the bread perfectly. About halfway through the baking time I sprinkled some chocolate chips and nuts on top to make it look pretty. Next time I’m going to try using brown sugar instead. I think that would provide a bit of extra flavor and moisture to the loaf.

Please be aware that you MUST scrape down the sides of the bread pan when the machine beeps for add-ins. At this point in the recipe, you will add the chopped nuts, but you may also find dough that isn’t well mixed stuck to the sides and bottom of the pan. Just use a rubber spatula and clean off the unmixed dough as you would in a mixing bowl. Be sure to use rubber or silicone…you don’t want to scratch the pan of your bread machine!

Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. I know I have a winning recipe on my hands when my husband and 3 year old start snacking on it as soon as its cool enough to handle and immediatly ask me to make it again soon. This bread turned out so well, just like a cinnamon roll in loaf form. I don't have a bread machine so I did have to adjust the directions for use in my stand mixer. I combined the white sugar and warm milk in my mixer bowl and added the yeast to proof. Once proofed I mixed in the eggs and softened butter until the butter was broken up into chunks and the eggs were mixed in. I then added the flour/salt that had already been mixed to combine. I let the dough hook do all the kneading and when finished I lightly oiled the bowl and the top of the dough, covered with plastic wrap and let it rise until doubled. From that point on I followed the recipe except for doubling the sugar/cinnamon part of the filling. I made one loaf with walnuts and one without since my husband isn't crazy about them. We can't wait to try this bread toasted tomorrow morning. The only change I'll make next time is to brush the dough with an egg wash before baking so it comes out nice and glossy. Highly recommend! Ok, this bread turned out so yummy…. however, my machine doesn’t work like most I guess. It’s a very basic West Bend one and has very few options. So I followed the recipe (except I didn’t have the walnuts so it got double chocolate chips!) and it ran through the rapid cycle which took 3 hrs on my machine. But it was still dough inside. So I baked it for another 25 mins at 400. I’ve decided that I’m still going to use this recipe for baking the bread though. It was so good.
However, oven-baked banana breads are a little more forgiving as you can stir more gently if needed (and thus less crushed fruit or shattered chocolate chips).
