I made this yesterday. It came out perfectly. The only difference from the original recipe was that I used chocolate chunks instead of chocolate chips because it’s what I had in the house. I wouldn’t recommend it because they migrated to the edges. And I added 1/2 teaspoon of vanilla extract. My wife doesn’t like bananas or walnuts and she loved it.

Delicious! Instead of spreading butter before rolling it up, I tried a method I saw online and mixed the cinnamon mixture with egg which acts as a binder. This keeps the layers from separating when it is baked. I did use too much egg and my mixture was too runny. Next time I will use 1-2 Tablespoons of egg instead of a whole one. There will definitely be a next time!

I used this recipe in the oven and not the bread machine and it turned out great. I mixed the bananas, egg, oil together, then added the sugar and baking soda/powder (mix very well to get slightly fluffy). (I usually use more than the suggested # of bananas, by at least 1/2 extra banana) Then added all that to a larger bowl with the flour and some cinnamon. Baked for 40ish minutes at 350-375 (depending on your oven). Took it out when the toothpick came out clean. I also added blueberries to the mix. Very tasty. Light and Fluffy.

This is a delicious and super easy way to bake banana bread. I used my Oster brand bread machine on the quick setting and it baked the bread perfectly. About halfway through the baking time I sprinkled some chocolate chips and nuts on top to make it look pretty. Next time I’m going to try using brown sugar instead. I think that would provide a bit of extra flavor and moisture to the loaf.

I have to think that people perhaps make alterations to the recipe or don’t follow the instructions (even if they *think* they did). I’ve tweaked my Banana Bread recipe with substitutions for oil (applesauce) and buttermilk (Greek Yogurt). The butter in this one gives me pause; have you ever substituted the fat content in bread machine recipes with applesauce or something else? I’d be curious how they turned out. I’m not sure my husband would be willing to let the bananas be Guinea pigs, so to speak. He buys bananas and purposely lets them go too ripe so I have to make banana bread, lol!
In order to make bread machine banana bread, you need to use the Quick Bread setting. Don’t be fooled by setting names like Quick, Rapid or Express (as these settings are often used for very rapid baking and are not used for quick breads). Unfortunately, setting names can vary between bread machine manufacturers. Therefore, you must check your bread machine’s instructions/manual for the exact setting used for quick breads (i.e. banana bread) on your bread machine. However, be aware that some basic bread machines have only a very limited number of settings and may not have a quick bread setting.
This turned out delicious! Super Moist. Not overcooked; not dry; just perfect. I have a Cuisinart bread maker and didn’t have a “Quick Bread” button so I used the “Ultra Fast” setting for 1 1/2 pounds at 2:03 hrs and added 7 tbsp of water since I live in high altitude 7,100 ft (1 Tbsp/1,000 ft). I have made this bread several times. The results have been great each time, and it taste just like a cake. I’ve received positive reviews about this bread from others. My only suggestion is to add the chips after the liquid ingredients, as they melted when I added them with the dry ingredients the first time I made this bread. The bread came out dark, but it was still good.

When you bake chocolate chips in a banana bread in the oven, the don’t melt and make the bread brown. You can see in my photo that mine did not do that in my bread machine either. Even if they did melt, how would all that chocolate flavour disappear? Also, I’m not sure how your bananas were flavourless. We quite enjoyed the recipe, and the above commenter (April) said it worked perfectly in her machine. Sorry it didn’t work for you. 🙁

Please mash the ripe bananas with a fork before adding them to the bread pan. Ripe bananas are soft and are very easy to mash. Most bread machine paddles/mixers will not mash large banana chunks properly (just stirs them around) and the banana bread will not come out correctly if you have not mashed the bananas. Be careful when removing the banana bread from the bread loaf pan. Banana breads are much softer than sandwich-type bread loaves. Therefore, they can break or “dent” more easily when you remove them from the bread loaf pan. When removing the banana bread from the bread pan, you should also be careful of the movable bread pan handle (because it can swing into the banana bread and cause damage).
Some basic bread machine models only have a limited number of settings. These models may not have a quick bread setting which is designed for recipes that use faster rising baking soda/powder versus slow rising yeast. If your bread machine lacks a quick bread setting then the banana bread might burn (as the other settings generally have longer baking cycles). They are geared towards yeast breads (i.e. sandwich breads) that don’t rise as quickly as baking soda/powder breads (i.e. banana bread).

If the top center of the bread looks too moist when you take it out of the bread machine, you can try the classic baking “toothpick test”. Gently push a toothpick/chopstick/skewer into the top of the bread and see if any batter sticks to the toothpick/chopstick/skewer. Make sure to wear oven gloves because the bread pan and bread machine will still be hot. If batter is sticking to the toothpick/chopstick/skewer then it hasn’t completely cooked. Place the bread loaf pan back into the still warm bread machine for another 5 minutes. After the 5 minutes, remove the bread pan and test the banana bread again with a toothpick/chopstick/skewer. FYI – Given variability in banana sizes, banana breads tend to have more moistness variability than many other recipes. Moreover, since most bread machines turn off automatically after a specified time and you can not adjust the baking temperature, they are little less flexible than ovens in dealing with baking “variances”. Thus the need to use the toothpick test if the banana bread top looks too moist (or you can skip the toothpick test and just leave the banana bread in the still warm bread machine for an extra 5 minutes if the top looks a little too moist).


Please be aware that you MUST scrape down the sides of the bread pan when the machine beeps for add-ins. At this point in the recipe, you will add the chopped nuts, but you may also find dough that isn’t well mixed stuck to the sides and bottom of the pan. Just use a rubber spatula and clean off the unmixed dough as you would in a mixing bowl. Be sure to use rubber or silicone…you don’t want to scratch the pan of your bread machine!

iv tried this recipe twice and so far im loving it. infavt the second time i did it i doubled the amount yo get a bigger loaf. But i have to warn you if your bread mechine does not have a bake only function itz definitely a risk. my quick bread cycle was 2hrs 10min long.i had to add additional 20min bake time to it as the inside was still underbaked. Must must use extremely ripe bananas and iv noticed significant difference in the taste from the 2 loafs i did because of the banana. i live in a south east asia so we have so many types of banana and they all taste different. so getting the right banana does make a difference in the taste. but overall its a very very easy and tasty banana bread.! highly recommend.!
I tried this yesterday and it turned out great! The next time I make I will add vanilla and walnuts it was a little bland..I think I needed another banana (mine were pretty small) and I did like another reviewer and put them in a plastic bag first and squished it up first this worked well..this recipe only took about 5 minutes to throw together and was by far the easiest way to make banana bread! I got a bread machine for Christmas and this is ALWAYS my go-to black banana recipe!! My quick bread setting is 1hr 43min so I make it the night before and it’s ready for breakfast in the morning. My kids are always thrilled. I do reduce the sugar to 1/3c and use half whole wheat flour (no walnuts) to try for a more wholesome recipe and it’s just as good!! <3

Same thing happened to my first loaf. I thought I had done something wrong. I suspect bread machines vary. Mine heats while the ingredients are mixing. I suspect that is why the chocolate chips melted. My loaf was underdone and caved in the middle. As if a hunk of mashed banana didn’t mix completely. I’m really assuming the castropy happened because of the bread machine. It did smell amazing while cooking. I wanted to throw my loaf out as well but hate wasting food. Simply; I gave it to someone else. Made it again the old fashioned way… In the oven. Better result.

Also be aware that some people go beyond just scraping the sides of the bread pan in order to avoid any leftover flour sticking to the sides of their finished banana bread. They will first mix all of the ingredients by hand in a mixing bowl and then add it to the bread machine bread pan (versus adding all of the ingredients to the bread pan and letting the bread machine mix everything). While this is an extra step, premixing the ingredients greatly reduces the potential for any unwanted small flour “clumps” and/or flour sticking to the sides of the finished banana bread. After hand mixing the ingredients, you should just follow the rest of the recipe instructions (i.e. enter proper bread machine settings and so on). However, always remember to add the ingredients (or hand mixed batter) to the bread pan when the bread pan is out of the bread machine and the bread machine is unplugged.

The instructions that came with my (gifted) Hamilton Beach machine included a mixing, kneading, cooking time chart for each setting. I searched and found that one or two other brands also had somewhat similar charts. But most of the machines I researched did not. So, there may be no way to compare settings, and no way to predict outcome from an incomplete bread machine recipe. I even tried to identify the machine used by this author (from the pix of his control panel) but I had no luck. So, I have no idea how the settings on his machine might compare with the settings on mine.

This cinnamon bread is excellent. I followed the recipe ingredients but made rolls instead of a loaf and added raisins. I LOVE the filling so I doubled the ingredients to satisfy my sweet tooth and I'm glad I did because to my liking there was barely enough to cover both rectangles. I added 1 cup Thomson raisins, soaked for 30 min. in 1/4 cup brandy with a 1/4 tsp sugar sprinkled over them (kills the bitterness) stirring a few times to coat them evenly. The dough is great to work with and not sticky at all. When I sprinkled the raisins over the sugar mix I put a sheet of wax paper to cover it and ran the rolling pin over it lightly a few times to press the mixture into the dough (makes rolling it up easier and less filling leaks out). I rolled it up from the long end and sliced it into 1" pieces and popped them into Pam-sprayed muffin tins. I always brush my rolls with soft butter and sprinkle a little brown sugar over them, about 1/8 tsp on each (to keep some yummy, gooey syrup on the tops). It only took 15 min to turn golden with syrup spread over the tops.Even though I doubled the filling very little of it leaked out. I lifted each to a rack and while still warm I drizzled the tops with basic milk/icing sugar glaze. When they cooled I drizzled a 2nd layer of glaze over the tops as it will not soak into the roll and disappear. Then I ate 4 of them! My goodness, this beautiful bread makes accidental rolls a great mistake. Thank you MN Nice for sharing.
