Oh my goodness this turned out DIVINE. I had some friends over, one of who is a bit of an instagram celebrity when it comes to baking, and she was very impressed! Absolutely delicious – I think next time I will try less sugar (as I used two black bananas so sweet enough), and try add some vanilla as someone suggested above. My only slight imperfection was that their seemed to be a pooling of choc chips in the corners. Will try do a swoop with a spatula prior to the baking part next time. Thanks

I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. Please mash the ripe bananas with a fork before adding them to the bread pan. Ripe bananas are soft and are very easy to mash. Most bread machine paddles/mixers will not mash large banana chunks properly (just stirs them around) and the banana bread will not come out correctly if you have not mashed the bananas. Indescribably delicious! I usually make banana bread by hand, so I was a touch skeptical about using the bread machine, but it came out dense and golden and smelled wonderful while baking. I began with the recipe Dee provided, then I added an extra banana, 1/2 tsp. ground cinnamon, a splash of vanilla, and in lieu of nuts, a heaping tbsp. of poppy seeds. I also added 4 oz. of plain applesauce (one of those individual cups). I used a Breadman Rapid Deluxe machine, which does not allow you to stop and then bake. Instead, I used the 1 pound setting and the "fruit/nut bread" option. It takes about 3 hours and 15 minutes to produce the loaf, but it mixes and stops and mixes and stops: the actual baking part is about an hour long. The banana bread had a more cakelike than breadlike texture (due to the addition of the applesauce) and was very dense, but oh so good! I love the ease and convenience of this recipe and I will use it often. A word of caution: use a rubber spatula to scrape the corners during the mixing phase to integrate all of the flour (be careful of the machine's mixing paddle), or some of the dry ingredients may get stuck in the corners of the pan. This banana bread recipe turns out really well in a bread maker and it's a great way to to get rid of overripe bananas sitting in the bowl. In our family nobody touches bananas if the skin has any sign of black. I guess we all worry that they are spoiled. So, rather than wasting them, into the bread maker they go.

The only thing I did was sub the butter for the oil. When I first start making recipes with my bread machine, I did a little research and everything I could get my hands on said to use oil instead of butter (save the butter for the outside when you are eating it–not the inside when you are cooking it) and the reasons for it (can’t recall the reasons listed, but they made sense and I remembered the mantra!). I’m a little surprised so many people had a hard time with this or it didn’t turn out right for them. I’m fairly new to making bread, but I followed the recipe exactly (minus being a tad shy on walnuts), and I didn’t have any problems. I had a little “dust” on one end and side of the loaf where some dry ingredients didn’t get all the way mixed in, but it brushed off and didn’t seem to hurt anything. I didn’t necessarily LOVE this recipe, but it was good. It may just be my bread machine too, but this had a bit more of a crust to the outsides than what I would want on a banana bread. It was my first time making quick bread in my machine too though. That being said, the inside was soft and delicious. I didn’t have any problem with chocolate chips melting and getting mixed into the bread turning it brown like one person mentioned, and the banana taste was a tad mild, but definitely there, for me. I would make this again, but hope I can find a way to soften up the outside to make it more to my liking. It was really easy to make with these instructions though.

This is a delicious and super easy way to bake banana bread. I used my Oster brand bread machine on the quick setting and it baked the bread perfectly. About halfway through the baking time I sprinkled some chocolate chips and nuts on top to make it look pretty. Next time I’m going to try using brown sugar instead. I think that would provide a bit of extra flavor and moisture to the loaf.

I’m SO happy with this recipe. Have tried others that didn’t cook all the way through. But this turned out fluffy and moist! My substitutions worked out great- packed brown sugar and Bob’s Red Mill 1 to 1 Gluten Free baking flour. I was nervous about not using bread flour but it turned out wonderfully on the cake setting for 1:40. Will be making again! Only thing I’ll slightly tweak next time is opening up my bread machine during mixing to scrape some of the flour off the sides to make sure it all incorporates since I had a little bit of flour on the sides of the bread. Not a big deal at all though, still very tasty! Thank you.

Delicious! Instead of spreading butter before rolling it up, I tried a method I saw online and mixed the cinnamon mixture with egg which acts as a binder. This keeps the layers from separating when it is baked. I did use too much egg and my mixture was too runny. Next time I will use 1-2 Tablespoons of egg instead of a whole one. There will definitely be a next time!
Same thing happened to my first loaf. I thought I had done something wrong. I suspect bread machines vary. Mine heats while the ingredients are mixing. I suspect that is why the chocolate chips melted. My loaf was underdone and caved in the middle. As if a hunk of mashed banana didn’t mix completely. I’m really assuming the castropy happened because of the bread machine. It did smell amazing while cooking. I wanted to throw my loaf out as well but hate wasting food. Simply; I gave it to someone else. Made it again the old fashioned way… In the oven. Better result.
