I used this recipe in the oven and not the bread machine and it turned out great. I mixed the bananas, egg, oil together, then added the sugar and baking soda/powder (mix very well to get slightly fluffy). (I usually use more than the suggested # of bananas, by at least 1/2 extra banana) Then added all that to a larger bowl with the flour and some cinnamon. Baked for 40ish minutes at 350-375 (depending on your oven). Took it out when the toothpick came out clean. I also added blueberries to the mix. Very tasty. Light and Fluffy.

This works equally well baked. I wanted to try making it in the bread machine but my machine was not working on sweet bread so I took it back out and mixed it in a bowl, put it in a loaf pan and baked it in my toaster oven.I threw another batch together and added chocolate chips and put that in my convection oven. 350 in the toaster oven and 325 in the convection oven. approx 45 min. to an hour and it as done.
However, oven-baked banana breads are a little more forgiving as you can stir more gently if needed (and thus less crushed fruit or shattered chocolate chips). In addition, oven-baked banana breads will not have a bread machine mixing paddle “hole” in the bottom. For oven-baked banana bread recipes, please visit our Easy Banana Bread Variations section.
Making this right now in my Hamilton Beach model# 29882 machine. Luckily I was watching as it starting mixing because the egg/banana/milk slurry was just spinning in the center while most of the flour was staying put on the edges! I helped it along with a rubber spatula and it mixed just fine, but seems awfully wet. The baking cycle is beginning now… Fingeres crossed!
Also be aware that some people go beyond just scraping the sides of the bread pan in order to avoid any leftover flour sticking to the sides of their finished banana bread. They will first mix all of the ingredients by hand in a mixing bowl and then add it to the bread machine bread pan (versus adding all of the ingredients to the bread pan and letting the bread machine mix everything). While this is an extra step, premixing the ingredients greatly reduces the potential for any unwanted small flour “clumps” and/or flour sticking to the sides of the finished banana bread. After hand mixing the ingredients, you should just follow the rest of the recipe instructions (i.e. enter proper bread machine settings and so on). However, always remember to add the ingredients (or hand mixed batter) to the bread pan when the bread pan is out of the bread machine and the bread machine is unplugged.
Indescribably delicious! I usually make banana bread by hand, so I was a touch skeptical about using the bread machine, but it came out dense and golden and smelled wonderful while baking. I began with the recipe Dee provided, then I added an extra banana, 1/2 tsp. ground cinnamon, a splash of vanilla, and in lieu of nuts, a heaping tbsp. of poppy seeds. I also added 4 oz. of plain applesauce (one of those individual cups). I used a Breadman Rapid Deluxe machine, which does not allow you to stop and then bake. Instead, I used the 1 pound setting and the "fruit/nut bread" option. It takes about 3 hours and 15 minutes to produce the loaf, but it mixes and stops and mixes and stops: the actual baking part is about an hour long. The banana bread had a more cakelike than breadlike texture (due to the addition of the applesauce) and was very dense, but oh so good! I love the ease and convenience of this recipe and I will use it often. A word of caution: use a rubber spatula to scrape the corners during the mixing phase to integrate all of the flour (be careful of the machine's mixing paddle), or some of the dry ingredients may get stuck in the corners of the pan. I added another egg and about 1/4 cup of olive oil and it came out awesome. I read some of the comments about it being dry. Tbh i thought reading the recipe they accidentally forgot to put oil on there. In all the other recipes i have done has about a 1/4 cup of either oil or softened butter. I added it anyways before venturing down to the comment sections when i put it in the machine.

I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them. Before making this recipe, please read our tips section because bread machines vary. Manufacturers often use completely different setting names (in order to make the same recipe). If you do not use the correct setting, you will have trouble with bread machine recipes (i.e. your banana bread may be potentially under or overcooked). For example, there is often some confusion regarding setting names such as Quick Bread, Quick/Express/Rapid, Sweet Bread and Cake. These settings tend to be completely different (i.e. different baking times). You need to use the specific setting on your bread machine model (read your manual) that was designed for sweet quick bread recipes (i.e. banana bread that uses baking soda/powder and not yeast). See the middle section of the tips below (focused on the quick bread setting) for more information on this issue.
Hi There: The problem I had with this receipe is that I have a Black & Decker bread machine. There is no stop button and you can not set the cook time you would like. Once you have picked the bread/ pasta or dough that you want to make that's it the machine does the rest. This receipe is probably really good but for people that have a Black & Decker machine I don't recommend it.

If you have a problem with a banana bread recipe, please make sure that you are following the recipe exactly. You will need to make sure that you are inputting the correct bread machine settings, using the exact ingredient measurements (i.e. don’t eyeball the measurements versus using a measuring cup), using the exact ingredients called for in the recipe (i.e. baking soda/powder versus yeast or all purpose flour versus bread flour), etc. Please don’t “wing” things with recipes unless you are willing to live with your experiments!

I have made this bread several times. The results have been great each time, and it taste just like a cake. I’ve received positive reviews about this bread from others. My only suggestion is to add the chips after the liquid ingredients, as they melted when I added them with the dry ingredients the first time I made this bread. The bread came out dark, but it was still good.
