I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. Making this right now in my Hamilton Beach model# 29882 machine. Luckily I was watching as it starting mixing because the egg/banana/milk slurry was just spinning in the center while most of the flour was staying put on the edges! I helped it along with a rubber spatula and it mixed just fine, but seems awfully wet. The baking cycle is beginning now… Fingeres crossed!
I’m SO happy with this recipe. Have tried others that didn’t cook all the way through. But this turned out fluffy and moist! My substitutions worked out great- packed brown sugar and Bob’s Red Mill 1 to 1 Gluten Free baking flour. I was nervous about not using bread flour but it turned out wonderfully on the cake setting for 1:40. Will be making again! Only thing I’ll slightly tweak next time is opening up my bread machine during mixing to scrape some of the flour off the sides to make sure it all incorporates since I had a little bit of flour on the sides of the bread. Not a big deal at all though, still very tasty! Thank you.

I got a bread machine for Christmas and this is ALWAYS my go-to black banana recipe!! My quick bread setting is 1hr 43min so I make it the night before and it’s ready for breakfast in the morning. My kids are always thrilled. I’ve tweaked my Banana Bread recipe with substitutions for oil (applesauce) and buttermilk (Greek Yogurt). The butter in this one gives me pause; have you ever substituted the fat content in bread machine recipes with applesauce or something else? I’d be curious how they turned out. I’m not sure my husband would be willing to let the bananas be Guinea pigs, so to speak. He buys bananas and purposely lets them go too ripe so I have to make banana bread, lol!

I have been throwing all my ripened bananas in the freezer now for well over 2 years. When I need to use banana, I just go to the freezer and pull out what I need. They thaw ridiculously fast and I think the texture of a frozen banana is so much easier to work with than a ripened banana that has not been frozen. I wish I would have known about this ten years ago. I have no idea how many bananas I have tossed in the garbage.
I used this recipe in the oven and not the bread machine and it turned out great. I mixed the bananas, egg, oil together, then added the sugar and baking soda/powder (mix very well to get slightly fluffy). (I usually use more than the suggested # of bananas, by at least 1/2 extra banana) Then added all that to a larger bowl with the flour and some cinnamon. Baked for 40ish minutes at 350-375 (depending on your oven). Took it out when the toothpick came out clean. I also added blueberries to the mix. Very tasty. Light and Fluffy.

iv tried this recipe twice and so far im loving it. infavt the second time i did it i doubled the amount yo get a bigger loaf. But i have to warn you if your bread mechine does not have a bake only function itz definitely a risk. my quick bread cycle was 2hrs 10min long.i had to add additional 20min bake time to it as the inside was still underbaked. Must must use extremely ripe bananas and iv noticed significant difference in the taste from the 2 loafs i did because of the banana. i live in a south east asia so we have so many types of banana and they all taste different. so getting the right banana does make a difference in the taste. but overall its a very very easy and tasty banana bread.! highly recommend.!

When the bread machine has finished baking the bread, unplug the bread machine, remove the bread pan and place it on a wooden cutting board. Let the bread stay within the bread loaf container for 10 minutes before you remove it from the bread loaf container. Use oven mitts when removing the bread machine container (bread loaf pan) because it will be very hot!
Select Sweet and Light settings on your machine and add raisins as per your manufacturer’s instructions. They can be added in with everything else. Start your bread machine. After the first kneading cycle is over, the bread should be smooth and stretchy. It should feel dry when you touch it. If necessary, add flour by the tablespoon to adjust the bread.
