This cinnamon bread is excellent. I followed the recipe ingredients but made rolls instead of a loaf and added raisins. I LOVE the filling so I doubled the ingredients to satisfy my sweet tooth and I'm glad I did because to my liking there was barely enough to cover both rectangles. I added 1 cup Thomson raisins, soaked for 30 min. in 1/4 cup brandy with a 1/4 tsp sugar sprinkled over them (kills the bitterness) stirring a few times to coat them evenly. The dough is great to work with and not sticky at all. When I sprinkled the raisins over the sugar mix I put a sheet of wax paper to cover it and ran the rolling pin over it lightly a few times to press the mixture into the dough (makes rolling it up easier and less filling leaks out). I rolled it up from the long end and sliced it into 1" pieces and popped them into Pam-sprayed muffin tins. I always brush my rolls with soft butter and sprinkle a little brown sugar over them, about 1/8 tsp on each (to keep some yummy, gooey syrup on the tops). It only took 15 min to turn golden with syrup spread over the tops.Even though I doubled the filling very little of it leaked out. I lifted each to a rack and while still warm I drizzled the tops with basic milk/icing sugar glaze. When they cooled I drizzled a 2nd layer of glaze over the tops as it will not soak into the roll and disappear. Then I ate 4 of them! Must must use extremely ripe bananas and iv noticed significant difference in the taste from the 2 loafs i did because of the banana. i live in a south east asia so we have so many types of banana and they all taste different. so getting the right banana does make a difference in the taste. but overall its a very very easy and tasty banana bread.! highly recommend.!

I know I have a winning recipe on my hands when my husband and 3 year old start snacking on it as soon as its cool enough to handle and immediatly ask me to make it again soon. This bread turned out so well, just like a cinnamon roll in loaf form. I don't have a bread machine so I did have to adjust the directions for use in my stand mixer. I combined the white sugar and warm milk in my mixer bowl and added the yeast to proof. Once proofed I mixed in the eggs and softened butter until the butter was broken up into chunks and the eggs were mixed in. I then added the flour/salt that had already been mixed to combine. I let the dough hook do all the kneading and when finished I lightly oiled the bowl and the top of the dough, covered with plastic wrap and let it rise until doubled. From that point on I followed the recipe except for doubling the sugar/cinnamon part of the filling. I made one loaf with walnuts and one without since my husband isn't crazy about them. We can't wait to try this bread toasted tomorrow morning. The only change I'll make next time is to brush the dough with an egg wash before baking so it comes out nice and glossy. Highly recommend! Oh my goodness this turned out DIVINE. I had some friends over, one of who is a bit of an instagram celebrity when it comes to baking, and she was very impressed! Absolutely delicious – I think next time I will try less sugar (as I used two black bananas so sweet enough), and try add some vanilla as someone suggested above. My only slight imperfection was that their seemed to be a pooling of choc chips in the corners. Will try do a swoop with a spatula prior to the baking part next time. Thanks
The key to great banana bread is… RIPE bananas!!! If you use bananas that are hard & yellow or even worse green, they will contain too much starch and not enough natural sugars. As bananas ripen, they convert this starch into sugar. According to Wikipedia, “The greener, less ripe bananas contain higher levels of starch and, consequently, have a “starchier” taste. On the other hand, yellow bananas taste sweeter due to higher sugar concentrations”. FYI – You will know if a banana is ripe when it is soft and shows small brown & black spots on the yellow exterior of the banana.
Select Sweet and Light settings on your machine and add raisins as per your manufacturer’s instructions. They can be added in with everything else. Start your bread machine. After the first kneading cycle is over, the bread should be smooth and stretchy. It should feel dry when you touch it. If necessary, add flour by the tablespoon to adjust the bread.

Thank you for the recipe! I made the bread using bread flour in my cuisinart cbk-110. I followed the recipe as is except omitted walnuts. I also used ripe bananas. I feel that I could have used another banana or banana flavored syrup to give it more flavoring. Also, definitely going to double up on the chocolate chips. On the machine, instead of rapid cycle, I used “cake” program which goes just at 1hr 52 mins. I had to add another 30 mins. Cooled it on wire rack for 2 hours and it was still pretty warm on the inside. Made few slices of half of the loaf and 3 hours later, sliced the rest of the loaf. It wasn’t dry at all. If I double up on chocolate chips and add extra banana, do I need to make any changes to the recipe?

Just to add some info I found interesting. When they call for using Quick Bread setting .. that is NOT Super Rapid cycle which is for breads with shorter rising times. However, you can use the Cake cycle which is used for NON - Yeast Breads. I am about to try a recipes that calls for all the same above ingredients except it has 1/3 melted butter and 1/2 cup milk, 1/2 cup nuts , 1/2 cup chocolate chips., only 2 Bananas. and 1/2 tsp salt. Hope it works.
I used this recipe in the oven and not the bread machine and it turned out great. I mixed the bananas, egg, oil together, then added the sugar and baking soda/powder (mix very well to get slightly fluffy). (I usually use more than the suggested # of bananas, by at least 1/2 extra banana) Then added all that to a larger bowl with the flour and some cinnamon. Baked for 40ish minutes at 350-375 (depending on your oven). Took it out when the toothpick came out clean. I also added blueberries to the mix. Very tasty. Light and Fluffy.
Please be aware that you MUST scrape down the sides of the bread pan when the machine beeps for add-ins. At this point in the recipe, you will add the chopped nuts, but you may also find dough that isn’t well mixed stuck to the sides and bottom of the pan. Just use a rubber spatula and clean off the unmixed dough as you would in a mixing bowl. Be sure to use rubber or silicone…you don’t want to scratch the pan of your bread machine!

Be careful when removing the banana bread from the bread loaf pan. Banana breads are much softer than sandwich-type bread loaves. Therefore, they can break or “dent” more easily when you remove them from the bread loaf pan. When removing the banana bread from the bread pan, you should also be careful of the movable bread pan handle (because it can swing into the banana bread and cause damage).

Please mash the ripe bananas with a fork before adding them to the bread pan. Ripe bananas are soft and are very easy to mash. Most bread machine paddles/mixers will not mash large banana chunks properly (just stirs them around) and the banana bread will not come out correctly if you have not mashed the bananas. Also be aware that some people go beyond just scraping the sides of the bread pan in order to avoid any leftover flour sticking to the sides of their finished banana bread. They will first mix all of the ingredients by hand in a mixing bowl and then add it to the bread machine bread pan (versus adding all of the ingredients to the bread pan and letting the bread machine mix everything). While this is an extra step, premixing the ingredients greatly reduces the potential for any unwanted small flour “clumps” and/or flour sticking to the sides of the finished banana bread. After hand mixing the ingredients, you should just follow the rest of the recipe instructions (i.e. enter proper bread machine settings and so on). However, always remember to add the ingredients (or hand mixed batter) to the bread pan when the bread pan is out of the bread machine and the bread machine is unplugged.

Same thing happened to my first loaf. I thought I had done something wrong. I suspect bread machines vary. Mine heats while the ingredients are mixing. I suspect that is why the chocolate chips melted. My loaf was underdone and caved in the middle. As if a hunk of mashed banana didn’t mix completely. I’m really assuming the castropy happened because of the bread machine. It did smell amazing while cooking. I wanted to throw my loaf out as well but hate wasting food. Simply; I gave it to someone else. Made it again the old fashioned way… In the oven. Better result.
