This turned out delicious! Super Moist. Not overcooked; not dry; just perfect. I have a Cuisinart bread maker and didn’t have a “Quick Bread” button so I used the “Ultra Fast” setting and added 7 tbsp of water since I live in high altitude 7,100 ft (1 Tbsp/1,000 ft). The only thing that went wrong we’re the chocolate chips totally melted. Next time I will add them later in the “add cycle”. Thank you for sharing. I made this yesterday. It came out perfectly. The only difference from the original recipe was that I used chocolate chunks instead of chocolate chips because it’s what I had in the house. I wouldn’t recommend it because they migrated to the edges. And I added 1/2 teaspoon of vanilla extract. My wife doesn’t like bananas or walnuts and she loved it.

I’m SO happy with this recipe. Have tried others that didn’t cook all the way through. But this turned out fluffy and moist! My substitutions worked out great- packed brown sugar and Bob’s Red Mill 1 to 1 Gluten Free baking flour. I was nervous about not using bread flour but it turned out wonderfully on the cake setting for 1:40. Will be making again! Only thing I’ll slightly tweak next time is opening up my bread machine during mixing to scrape some of the flour off the sides to make sure it all incorporates since I had a little bit of flour on the sides of the bread. Not a big deal at all though, still very tasty! Thank you.
I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them.

If you have lost or misplaced your bread machine instructions, you should check online. Many bread machine manufacturers have placed their instruction manuals on their websites. Just do a search for your bread machine manufacturer and include the word “instructions” or “manual” (i.e. XYZ bread machine instructions). The online manufacturer instructions should tell you if your bread machine can handle quick bread (i.e. banana bread) recipes.
Oh my goodness this turned out DIVINE. I had some friends over, one of who is a bit of an instagram celebrity when it comes to baking, and she was very impressed! Absolutely delicious – I think next time I will try less sugar (as I used two black bananas so sweet enough), and try add some vanilla as someone suggested above. My only slight imperfection was that their seemed to be a pooling of choc chips in the corners. Will try do a swoop with a spatula prior to the baking part next time. Thanks

I have used this same recipe for years, except I use 3 Tablespoons of oil instead of the melted butter. I am going to try the butter once and see if I like it better. One thing for the person who thought the bread was tasteless is make sure you are using ripe bananas, the blacker the better! I have an Oster machine and it does not have a quick bread setting. What I do is use the dough setting and mix for 5 minutes using a rubber spatula to get the flour off the sides of the pan, and then press bake and bake it for about an hour and ten minutes.I then take the pan out of the machine and let the bread set for about 10 minutes before taking it out of the pan. I have made at least 100 loaves of this bread and everyone loves it!

Delicious! Instead of spreading butter before rolling it up, I tried a method I saw online and mixed the cinnamon mixture with egg which acts as a binder. This keeps the layers from separating when it is baked. I did use too much egg and my mixture was too runny. Next time I will use 1-2 Tablespoons of egg instead of a whole one. There will definitely be a next time!
However, oven-baked banana breads are a little more forgiving as you can stir more gently if needed (and thus less crushed fruit or shattered chocolate chips). I have been throwing all my ripened bananas in the freezer now for well over 2 years. When I need to use banana, I just go to the freezer and pull out what I need. They thaw ridiculously fast and I think the texture of a frozen banana is so much easier to work with than a ripened banana that has not been frozen. I wish I would have known about this ten years ago. I have no idea how many bananas I have tossed in the garbage.

Hi There: The problem I had with this receipe is that I have a Black & Decker bread machine. There is no stop button and you can not set the cook time you would like. Once you have picked the bread/ pasta or dough that you want to make that's it the machine does the rest. This receipe is probably really good but for people that have a Black & Decker machine I don't recommend it.
I have made this bread several times. The results have been great each time, and it taste just like a cake. I’ve received positive reviews about this bread from others. My only suggestion is to add the chips after the liquid ingredients, as they melted when I added them with the dry ingredients the first time I made this bread. The bread came out dark, but it was still good.
Moreover, in many bread machines, the “sweet bread” setting is used for very sweet breads that use yeast (not baking soda/powder). A tad confusing! Nevertheless, sweet bread recipes are different from quick bread recipes and utilize different mixing & baking times. Therefore, a bread machine quick bread recipe (i.e. banana bread) is unlikely to work on the sweet bread setting. Check your bread machine instructions for the exact setting used for quick bread recipes (that utilize baking soda/powder – not yeast).

Optional – You can also turn this recipe into chocolate chip banana bread or blueberry banana bread. To make bread machine chocolate chip banana bread, you should add 3/4 of a cup of mini semi-sweet chocolate chips after the first mixing is finished and before the second/final mixing has started. I don’t like to use heavier regular chocolate chips because they tend to sink to the bottom of the batter (mini chips seem to spread out better). To make bread machine blueberry banana bread, you should add 3/4 of a cup of frozen blueberries after the first mixing is finished and before the second/final mixing has started. This is a delicious and super easy way to bake banana bread. I used my Oster brand bread machine on the quick setting and it baked the bread perfectly. About halfway through the baking time I sprinkled some chocolate chips and nuts on top to make it look pretty. Next time I’m going to try using brown sugar instead. I think that would provide a bit of extra flavor and moisture to the loaf.

When you bake chocolate chips in a banana bread in the oven, the don’t melt and make the bread brown. You can see in my photo that mine did not do that in my bread machine either. Even if they did melt, how would all that chocolate flavour disappear? Also, I’m not sure how your bananas were flavourless. We quite enjoyed the recipe, and the above commenter (April) said it worked perfectly in her machine. Sorry it didn’t work for you. 🙁

Excellent! I could tell from the recipe that there would not be enough filling without the walnuts and since I planned to omit them I too doubled the cinnamon/sugar mixture. Have an older style bread machiene. Sunbeam. Epic fail. Chose ‘sweet option’ and ‘rapid’ and ‘medium’ after what seemed like 2hrs of prepping,rising etc. it finally started baking. While the outsides of bread were great,it left a big liquid hole in the middle and top. It has a ‘bake delay’ setting but can only be used b4 starting cycle. Now it is in my oven trying to bake rest of the way. What crumbs i ate so far tasted good.

I used this recipe in the oven and not the bread machine and it turned out great. I mixed the bananas, egg, oil together, then added the sugar and baking soda/powder (mix very well to get slightly fluffy). (I usually use more than the suggested # of bananas, by at least 1/2 extra banana) Then added all that to a larger bowl with the flour and some cinnamon. Baked for 40ish minutes at 350-375 (depending on your oven). Took it out when the toothpick came out clean. I also added blueberries to the mix. Very tasty. Light and Fluffy.

Making this right now in my Hamilton Beach model# 29882 machine. Luckily I was watching as it starting mixing because the egg/banana/milk slurry was just spinning in the center while most of the flour was staying put on the edges! I helped it along with a rubber spatula and it mixed just fine, but seems awfully wet. The baking cycle is beginning now… Fingeres crossed!
If you are still having trouble finding the quick bread setting, check your bread machine manual for details regarding the cake setting on your machine. Some bread machines have a cake setting that states that they can be used for quick breads (and the mixing & baking will last roughly for 1 hour 40-50 minutes). However, other bread machines have a cake setting that is not designed for quick breads. For example, my bread machine (Sunbeam) has a cake setting (that lasts for 2 hours 50 minutes) and a quick bread setting (that lasts for 1 hour 40 minutes). Therefore, this recipe would probably not work well with the cake setting on my machine. I know this can be super confusing… but always read your bread machine manual and look for the specific setting designed for “quick breads” (that use baking soda/powder).

If the top center of the bread looks too moist when you take it out of the bread machine, you can try the classic baking “toothpick test”. Gently push a toothpick/chopstick/skewer into the top of the bread and see if any batter sticks to the toothpick/chopstick/skewer. Make sure to wear oven gloves because the bread pan and bread machine will still be hot. If batter is sticking to the toothpick/chopstick/skewer then it hasn’t completely cooked. Place the bread loaf pan back into the still warm bread machine for another 5 minutes. After the 5 minutes, remove the bread pan and test the banana bread again with a toothpick/chopstick/skewer. FYI – Given variability in banana sizes, banana breads tend to have more moistness variability than many other recipes. Moreover, since most bread machines turn off automatically after a specified time and you can not adjust the baking temperature, they are little less flexible than ovens in dealing with baking “variances”. Thus the need to use the toothpick test if the banana bread top looks too moist (or you can skip the toothpick test and just leave the banana bread in the still warm bread machine for an extra 5 minutes if the top looks a little too moist).
Be careful when removing the banana bread from the bread loaf pan. Banana breads are much softer than sandwich-type bread loaves. Therefore, they can break or “dent” more easily when you remove them from the bread loaf pan. When removing the banana bread from the bread pan, you should also be careful of the movable bread pan handle (because it can swing into the banana bread and cause damage).
