The instructions that came with my (gifted) Hamilton Beach machine included a mixing, kneading, cooking time chart for each setting. I searched and found that one or two other brands also had somewhat similar charts. But most of the machines I researched did not. So, there may be no way to compare settings, and no way to predict outcome from an incomplete bread machine recipe. I even tried to identify the machine used by this author (from the pix of his control panel) but I had no luck. So, I have no idea how the settings on his machine might compare with the settings on mine.
This is a delicious and super easy way to bake banana bread. I used my Oster brand bread machine on the quick setting and it baked the bread perfectly. About halfway through the baking time I sprinkled some chocolate chips and nuts on top to make it look pretty. Next time I’m going to try using brown sugar instead. I think that would provide a bit of extra flavor and moisture to the loaf.
Optional – If you want to make bread machine banana nut bread, you can add 3/4 cup of chopped walnuts to this recipe after the first bread machine mixing cycle and before the second mixing (final mixing). I like to add the chopped walnuts after the first mixing and before the final (second) mixing in order to minimize any mixing “breakage” of the chopped walnuts.
I tried this yesterday and it turned out great! The next time I make I will add vanilla and walnuts it was a little bland..I think I needed another banana (mine were pretty small) and I did like another reviewer and put them in a plastic bag first and squished it up first this worked well..this recipe only took about 5 minutes to throw together and was by far the easiest way to make banana bread! Luckily I was watching as it starting mixing because the egg/banana/milk slurry was just spinning in the center while most of the flour was staying put on the edges! I helped it along with a rubber spatula and it mixed just fine, but seems awfully wet. The baking cycle is beginning now… Fingeres crossed!

Banana bread may be served at tea time or at breakfast, although there is no rule as to when you may eat it. This banana bread recipe turns out really well in a bread maker and it's a great way to to get rid of overripe bananas sitting in the bowl. In our family nobody touches bananas if the skin has any sign of black. I guess we all worry that they are spoiled. So, rather than wasting them, into the bread maker they go.
Please mash the ripe bananas with a fork before adding them to the bread pan. Ripe bananas are soft and are very easy to mash. Most bread machine paddles/mixers will not mash large banana chunks properly (just stirs them around) and the banana bread will not come out correctly if you have not mashed the bananas. Enter the bread machine settings (Quick Bread, Light Color, 2 lb) and press the start button. FYI – Before making this recipe, please READ the tips section below for more information regarding the Quick Bread setting. This setting can be a little confusing on some bread machines. I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them.

Homemade banana bread will last only 1 or 2 days on the counter (and it will spoil even faster in a hot & humid environment). After baking and when the banana bread is completely cooled, you can store it on the counter in a large resealable plastic bag or an airtight container. You can also place a paper towel around the bread in order to absorb any extra moisture.
Indescribably delicious! I usually make banana bread by hand, so I was a touch skeptical about using the bread machine, but it came out dense and golden and smelled wonderful while baking. I began with the recipe Dee provided, then I added an extra banana, 1/2 tsp. ground cinnamon, a splash of vanilla, and in lieu of nuts, a heaping tbsp. of poppy seeds. I also added 4 oz. of plain applesauce (one of those individual cups). I used a Breadman Rapid Deluxe machine, which does not allow you to stop and then bake. Instead, I used the 1 pound setting and the "fruit/nut bread" option. It takes about 3 hours and 15 minutes to produce the loaf, but it mixes and stops and mixes and stops: the actual baking part is about an hour long. The banana bread had a more cakelike than breadlike texture (due to the addition of the applesauce) and was very dense, but oh so good! I love the ease and convenience of this recipe and I will use it often. A word of caution: use a rubber spatula to scrape the corners during the mixing phase to integrate all of the flour (be careful of the machine's mixing paddle), or some of the dry ingredients may get stuck in the corners of the pan. Enjoy!
I used this recipe in the oven and not the bread machine and it turned out great. I mixed the bananas, egg, oil together, then added the sugar and baking soda/powder (mix very well to get slightly fluffy). (I usually use more than the suggested # of bananas, by at least 1/2 extra banana) Then added all that to a larger bowl with the flour and some cinnamon. Baked for 40ish minutes at 350-375 (depending on your oven). Took it out when the toothpick came out clean. I also added blueberries to the mix. Very tasty. Light and Fluffy.

I’ve tweaked my Banana Bread recipe with substitutions for oil (applesauce) and buttermilk (Greek Yogurt). The butter in this one gives me pause; have you ever substituted the fat content in bread machine recipes with applesauce or something else? I’d be curious how they turned out. I’m not sure my husband would be willing to let the bananas be Guinea pigs, so to speak. He buys bananas and purposely lets them go too ripe so I have to make banana bread, lol!
