Have an older style bread machiene. Sunbeam. Epic fail. Chose ‘sweet option’ and ‘rapid’ and ‘medium’ after what seemed like 2hrs of prepping,rising etc. it finally started baking. While the outsides of bread were great,it left a big liquid hole in the middle and top. It has a ‘bake delay’ setting but can only be used b4 starting cycle. I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. Excellent! I could tell from the recipe that there would not be enough filling without the walnuts and since I planned to omit them I too doubled the cinnamon/sugar mixture. When baked and thickly sliced the texture of this bread is smooth and soft the sticky cinnamon-spicy sweetness oozes out and it creates the perfect ratio of bread to filling. The kids slathered their slices in homemade apple butter a friend gave us for Christmas but even plain this stuff is heavenly!

Please be aware that you MUST scrape down the sides of the bread pan when the machine beeps for add-ins. At this point in the recipe, you will add the chopped nuts, but you may also find dough that isn’t well mixed stuck to the sides and bottom of the pan. Just use a rubber spatula and clean off the unmixed dough as you would in a mixing bowl. Be sure to use rubber or silicone…you don’t want to scratch the pan of your bread machine!

Oh my goodness this turned out DIVINE. I had some friends over, one of who is a bit of an instagram celebrity when it comes to baking, and she was very impressed! Absolutely delicious – I think next time I will try less sugar (as I used two black bananas so sweet enough), and try add some vanilla as someone suggested above. My only slight imperfection was that their seemed to be a pooling of choc chips in the corners. Will try do a swoop with a spatula prior to the baking part next time. Thanks

The only thing I did was sub the butter for the oil. When I first start making recipes with my bread machine, I did a little research and everything I could get my hands on said to use oil instead of butter (save the butter for the outside when you are eating it–not the inside when you are cooking it) and the reasons for it (can’t recall the reasons listed, but they made sense and I remembered the mantra!). I do use bread flour though.

I’ve tweaked my Banana Bread recipe with substitutions for oil (applesauce) and buttermilk (Greek Yogurt). The butter in this one gives me pause; have you ever substituted the fat content in bread machine recipes with applesauce or something else? I’d be curious how they turned out. Cinnamon raisin bread is a lightly sweet yeast bread scented with cinnamon and studded with plump dried fruit. It's especially delicious for breakfast spread with butter or cream cheese. If you do not use the correct setting, you will have trouble with bread machine recipes (i.e. your banana bread may be potentially under or overcooked). For example, there is often some confusion regarding setting names such as Quick Bread, Quick/Express/Rapid, Sweet Bread and Cake. These settings tend to be completely different (i.e. different baking times). You need to use the specific setting on your bread machine model (read your manual) that was designed for sweet quick bread recipes (i.e. banana bread that uses baking soda/powder and not yeast). See the middle section of the tips below (focused on the quick bread setting) for more information on this issue.
Banana bread may be served at tea time or at breakfast, although there is no rule as to when you may eat it. This banana bread recipe turns out really well in a bread maker and it's a great way to to get rid of overripe bananas sitting in the bowl. In our family nobody touches bananas if the skin has any sign of black. I guess we all worry that they are spoiled. So, rather than wasting them, into the bread maker they go.

Ok, this bread turned out so yummy…. however, my machine doesn’t work like most I guess. It’s a very basic West Bend one and has very few options. So I followed the recipe (except I didn’t have the walnuts so it got double chocolate chips!) and it ran through the rapid cycle which took 3 hrs on my machine. But it was still dough inside. So I baked it for another 25 mins at 400. I’ve decided that I’m still going to use this recipe for baking the bread though. It was so good.
The instructions that came with my (gifted) Hamilton Beach machine included a mixing, kneading, cooking time chart for each setting. I searched and found that one or two other brands also had somewhat similar charts. But most of the machines I researched did not. So, there may be no way to compare settings, and no way to predict outcome from an incomplete bread machine recipe. I even tried to identify the machine used by this author (from the pix of his control panel) but I had no luck. So, I have no idea how the settings on his machine might compare with the settings on mine.
If the top center of the bread looks too moist when you take it out of the bread machine, you can try the classic baking “toothpick test”. Gently push a toothpick/chopstick/skewer into the top of the bread and see if any batter sticks to the toothpick/chopstick/skewer. Make sure to wear oven gloves because the bread pan and bread machine will still be hot. If batter is sticking to the toothpick/chopstick/skewer then it hasn’t completely cooked. Place the bread loaf pan back into the still warm bread machine for another 5 minutes. After the 5 minutes, remove the bread pan and test the banana bread again with a toothpick/chopstick/skewer. FYI – Given variability in banana sizes, banana breads tend to have more moistness variability than many other recipes. Moreover, since most bread machines turn off automatically after a specified time and you can not adjust the baking temperature, they are little less flexible than ovens in dealing with baking “variances”. Thus the need to use the toothpick test if the banana bread top looks too moist (or you can skip the toothpick test and just leave the banana bread in the still warm bread machine for an extra 5 minutes if the top looks a little too moist).

Also be aware that some people go beyond just scraping the sides of the bread pan in order to avoid any leftover flour sticking to the sides of their finished banana bread. They will first mix all of the ingredients by hand in a mixing bowl and then add it to the bread machine bread pan (versus adding all of the ingredients to the bread pan and letting the bread machine mix everything). While this is an extra step, premixing the ingredients greatly reduces the potential for any unwanted small flour “clumps” and/or flour sticking to the sides of the finished banana bread. After hand mixing the ingredients, you should just follow the rest of the recipe instructions (i.e. enter proper bread machine settings and so on). However, always remember to add the ingredients (or hand mixed batter) to the bread pan when the bread pan is out of the bread machine and the bread machine is unplugged.
Bread machine banana bread generally involves less work & steps than an oven-baked banana bread. A bread machine will mix the ingredients for you and bake the banana bread for you in the same machine. In contrast, an oven-baked banana bread involves more work & steps (i.e. you will need to mix the ingredients, pour into a bread pan and move to an oven).
Be careful when removing the banana bread from the bread loaf pan. Banana breads are much softer than sandwich-type bread loaves. Therefore, they can break or “dent” more easily when you remove them from the bread loaf pan. When removing the banana bread from the bread pan, you should also be careful of the movable bread pan handle (because it can swing into the banana bread and cause damage).
For what it’s worth, please be aware that no two bread machine models are alike. If your machine is not identical to the authors, your results WILL BE different. Any recipe that does not identify the specific brand/model of the machine used, plus all settings and times (including loaf size) the end result will be questionable. This is probably why the previous replies vary so wildly.
Don’t be fooled by setting names like Quick, Rapid or Express (as these settings are often used for very rapid baking and are not used for quick breads). They will leave your banana bread undercooked. For example, on my Sunbeam, the Quick Bread setting lasts for 1:40 hours versus the Express setting which lasts for 58 minutes. However, be aware that setting names can vary by bread machine manufacturer. Therefore, you must check your bread machine’s instructions/manual for the exact setting used for QUICK BREADS (recipes that use baking soda/powder) on your bread machine.
Enter the bread machine settings (Quick Bread, Light Color, 2 lb) and press the start button.
