Before making this recipe, please read our tips section because bread machines vary. Manufacturers often use completely different setting names (in order to make the same recipe). If you do not use the correct setting, you will have trouble with bread machine recipes (i.e. your banana bread may be potentially under or overcooked). For example, there is often some confusion regarding setting names such as Quick Bread, Quick/Express/Rapid, Sweet Bread and Cake. These settings tend to be completely different (i.e. different baking times). You need to use the specific setting on your bread machine model (read your manual) that was designed for sweet quick bread recipes (i.e. banana bread that uses baking soda/powder and not yeast). See the middle section of the tips below (focused on the quick bread setting) for more information on this issue.
I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. Same thing happened to my first loaf. I thought I had done something wrong. I suspect bread machines vary. Mine heats while the ingredients are mixing. I suspect that is why the chocolate chips melted. My loaf was underdone and caved in the middle. As if a hunk of mashed banana didn’t mix completely. I’m really assuming the castropy happened because of the bread machine. It did smell amazing while cooking. I wanted to throw my loaf out as well but hate wasting food. Simply; I gave it to someone else. Made it again the old fashioned way… In the oven. Better result.

Please be aware that you MUST scrape down the sides of the bread pan when the machine beeps for add-ins. At this point in the recipe, you will add the chopped nuts, but you may also find dough that isn’t well mixed stuck to the sides and bottom of the pan. Just use a rubber spatula and clean off the unmixed dough as you would in a mixing bowl. Excellent! I could tell from the recipe that there would not be enough filling without the walnuts and since I planned to omit them I too doubled the cinnamon/sugar mixture. When baked and thickly sliced the texture of this bread is smooth and soft the sticky cinnamon-spicy sweetness oozes out and it creates the perfect ratio of bread to filling. If the top center of the bread looks too moist when you take it out of the bread machine, you can try the classic baking “toothpick test”. Gently push a toothpick/chopstick/skewer into the top of the bread and see if any batter sticks to the toothpick/chopstick/skewer. Make sure to wear oven gloves because the bread pan and bread machine will still be hot. If batter is sticking to the toothpick/chopstick/skewer then it hasn’t completely cooked. Place the bread loaf pan back into the still warm bread machine for another 5 minutes. After the 5 minutes, remove the bread pan and test the banana bread again with a toothpick/chopstick/skewer. FYI – Given variability in banana sizes, banana breads tend to have more moistness variability than many other recipes. Moreover, since most bread machines turn off automatically after a specified time and you can not adjust the baking temperature, they are little less flexible than ovens in dealing with baking “variances”. Thus the need to use the toothpick test if the banana bread top looks too moist (or you can skip the toothpick test and just leave the banana bread in the still warm bread machine for an extra 5 minutes if the top looks a little too moist).

Optional – If you want to make bread machine banana nut bread, you can add 3/4 cup of chopped walnuts to this recipe after the first bread machine mixing cycle and before the second mixing (final mixing). I like to add the chopped walnuts after the first mixing and before the final (second) mixing in order to minimize any mixing “breakage” of the chopped walnuts.
