Same thing happened to my first loaf. I thought I had done something wrong. I suspect bread machines vary. Mine heats while the ingredients are mixing. I suspect that is why the chocolate chips melted. My loaf was underdone and caved in the middle. As if a hunk of mashed banana didn’t mix completely. I’m really assuming the castropy happened because of the bread machine. It did smell amazing while cooking. I wanted to throw my loaf out as well but hate wasting food. Simply; I gave it to someone else. Made it again the old fashioned way… In the oven. Better result.
I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them.

Hi There: The problem I had with this receipe is that I have a Black & Decker bread machine. There is no stop button and you can not set the cook time you would like. Once you have picked the bread/ pasta or dough that you want to make that's it the machine does the rest. This receipe is probably really good but for people that have a Black & Decker machine I don't recommend it.
Some basic bread machine models only have a limited number of settings. These models may not have a quick bread setting which is designed for recipes that use faster rising baking soda/powder versus slow rising yeast. If your bread machine lacks a quick bread setting then the banana bread might burn (as the other settings generally have longer baking cycles). They are geared towards yeast breads (i.e. sandwich breads) that don’t rise as quickly as baking soda/powder breads (i.e. banana bread).

This is a delicious and super easy way to bake banana bread. I used my Oster brand bread machine on the quick setting and it baked the bread perfectly. About halfway through the baking time I sprinkled some chocolate chips and nuts on top to make it look pretty. Next time I’m going to try using brown sugar instead. I think that would provide a bit of extra flavor and moisture to the loaf.

Excellent! I could tell from the recipe that there would not be enough filling without the walnuts and since I planned to omit them I too doubled the cinnamon/sugar mixture. When baked and thickly sliced the texture of this bread is smooth and soft the sticky cinnamon-spicy sweetness oozes out and it creates the perfect ratio of bread to filling. The kids slathered their slices in homemade apple butter a friend gave us for Christmas but even plain this stuff is heavenly!

Bake loaves in the preheated oven until lightly golden brown and bread sounds hollow when tapped, about 30 minutes. Hi Marsha. Not necessarily – the Oster machines have special bread recipes for their ExpressBake (quick) cycles. Instead of no yeast you use Red Star Quick Rise yeast and actually ramp the amount of yeast way up for those cycles. (Like 2 tablespoons versus a more regular 2 teaspoons.) Never tried making bread that way because it requires buying a different type yeast just for those cycles.

Therefore, after the first mixing cycle has fully stopped (and before the second & final mixing cycle has begun), I like to scrape the sides of the bread pan with a flexible silicon spatula (not a metal spatula). This loosens any flour that may be sticking to the sides of the bread pan (because a bread machine mixing “paddle” doesn’t quite reach the sides of the bread pan). For safety purposes, I do not scrape the sides of the bread pan when the mixing blade is moving. In addition, people should not stick their hands inside bread machines. Moreover, people should always wear oven mitts when dealing with a bread machine because the bread pan & bread machine interior can get quite hot.
I know I have a winning recipe on my hands when my husband and 3 year old start snacking on it as soon as its cool enough to handle and immediatly ask me to make it again soon. This bread turned out so well, just like a cinnamon roll in loaf form. I don't have a bread machine so I did have to adjust the directions for use in my stand mixer. I combined the white sugar and warm milk in my mixer bowl and added the yeast to proof. Once proofed I mixed in the eggs and softened butter until the butter was broken up into chunks and the eggs were mixed in. I then added the flour/salt that had already been mixed to combine. I let the dough hook do all the kneading and when finished I lightly oiled the bowl and the top of the dough, covered with plastic wrap and let it rise until doubled. From that point on I followed the recipe except for doubling the sugar/cinnamon part of the filling. I made one loaf with walnuts and one without since my husband isn't crazy about them. We can't wait to try this bread toasted tomorrow morning. The only change I'll make next time is to brush the dough with an egg wash before baking so it comes out nice and glossy. Highly recommend! Also be aware that some people go beyond just scraping the sides of the bread pan in order to avoid any leftover flour sticking to the sides of their finished banana bread. They will first mix all of the ingredients by hand in a mixing bowl and then add it to the bread machine bread pan (versus adding all of the ingredients to the bread pan and letting the bread machine mix everything). While this is an extra step, premixing the ingredients greatly reduces the potential for any unwanted small flour “clumps” and/or flour sticking to the sides of the finished banana bread. After hand mixing the ingredients, you should just follow the rest of the recipe instructions (i.e. enter proper bread machine settings and so on). However, always remember to add the ingredients (or hand mixed batter) to the bread pan when the bread pan is out of the bread machine and the bread machine is unplugged.

OH MY GOODNESS! I cut the recipe in half as I only had one loaf pan. I will be buying another! As Hubby cannot have nuts any more, I replaced the walnuts with raisins that I plumped. Since the batter for quick bread doesn't require kneading and is best with minimal mixing, you may need to adjust the mixing setting. This is especially true if your bread machine doesn't have a program for quick bread. For example, some machines have a "dough" setting to mix and a separate "bake" setting. Mixing should require just 3 to 5 minutes.
Indescribably delicious! I usually make banana bread by hand, so I was a touch skeptical about using the bread machine, but it came out dense and golden and smelled wonderful while baking. I began with the recipe Dee provided, then I added an extra banana, 1/2 tsp. ground cinnamon, a splash of vanilla, and in lieu of nuts, a heaping tbsp. of poppy seeds. I also added 4 oz. of plain applesauce (one of those individual cups). I used a Breadman Rapid Deluxe machine, which does not allow you to stop and then bake. Instead, I used the 1 pound setting and the "fruit/nut bread" option. It takes about 3 hours and 15 minutes to produce the loaf, but it mixes and stops and mixes and stops: the actual baking part is about an hour long. The banana bread had a more cakelike than breadlike texture (due to the addition of the applesauce) and was very dense, but oh so good! I love the ease and convenience of this recipe and I will use it often. A word of caution: use a rubber spatula to scrape the corners during the mixing phase to integrate all of the flour (be careful of the machine's mixing paddle), or some of the dry ingredients may get stuck in the corners of the pan. Making this right now in my Hamilton Beach model# 29882 machine. Luckily I was watching as it starting mixing because the egg/banana/milk slurry was just spinning in the center while most of the flour was staying put on the edges! I helped it along with a rubber spatula and it mixed just fine, but seems awfully wet. The baking cycle is beginning now… Fingeres crossed!
