Oh my goodness this turned out DIVINE. I had some friends over, one of who is a bit of an instagram celebrity when it comes to baking, and she was very impressed! Absolutely delicious – I think next time I will try less sugar (as I used two black bananas so sweet enough), and try add some vanilla as someone suggested above. My only slight imperfection was that their seemed to be a pooling of choc chips in the corners. Will try do a swoop with a spatula prior to the baking part next time. Thanks

I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them.

If you have lost or misplaced your bread machine instructions, you should check online. Many bread machine manufacturers have placed their instruction manuals on their websites. Just do a search for your bread machine manufacturer and include the word “instructions” or “manual” (i.e. XYZ bread machine instructions). I have made this bread several times. The results have been great each time, and it taste just like a cake. I’ve received positive reviews about this bread from others. My only suggestion is to add the chips after the liquid ingredients, as they melted when I added them with the dry ingredients the first time I made this bread. The bread came out dark, but it was still good.
Talk about your adventures in bread making! Next time I’ll know to look at my machine settings BEFORE I mix all the ingredients :)) My Oster does not have a Quick Bread setting. Taking the advice of another poster, I mixed the batter on the Basic setting for 5 minutes scraping the sides and as much of the bottom as I could. For some reason my Bake cycle would only set for one hour (I’m going to have to find a site with the instruction manual as it was lost in a move), so I Baked the bread for one hour. At this point I would recommend you test the bread for doneness with a skewer. I Baked it for another 10 minutes (using my kitchen timer since I had to set the machine for one hour) and the bottom and sides were almost too done. Also next time, I’ll remember to take the paddle out after mixing. Bread turned out delish with a cuppa, was going to share but maybe not 🙂 My chips did not melt, I wonder if the problem for the melted chips poster was with the chips themselves, and I did use bread flour.
I cannot even remotely recommend this recipe. I followed it exactly, and the bread was just tasteless. The chocolate chips melted and just made the bread brown without adding any flavor. The banana taste was almost non-existent, if I had not seen myself add the bananas, I would not have guessed any bananas were in it. I took three bites, spit out the third and threw the entire loaf in the trash. There was no flavor at all in this! What a waste of good ingredients. Save yourself the trouble, time and expense and don’t try this.

This turned out delicious! Super Moist. Not overcooked; not dry; just perfect. I have a Cuisinart bread maker and didn’t have a “Quick Bread” button so I used the “Ultra Fast” setting and added 7 tbsp of water since I live in high altitude 7,100 ft (1 Tbsp/1,000 ft). The only thing that went wrong we’re the chocolate chips totally melted. Next time I will add them later in the “add cycle”. Thank you for sharing. I’m a little surprised so many people had a hard time with this or it didn’t turn out right for them. I’m fairly new to making bread, but I followed the recipe exactly (minus being a tad shy on walnuts), and I didn’t have any problems. I had a little “dust” on one end and side of the loaf where some dry ingredients didn’t get all the way mixed in, but it brushed off and didn’t seem to hurt anything. I didn’t necessarily LOVE this recipe, but it was good. It may just be my bread machine too, but this had a bit more of a crust to the outsides than what I would want on a banana bread. It was my first time making quick bread in my machine too though. That being said, the inside was soft and delicious. I didn’t have any problem with chocolate chips melting and getting mixed into the bread turning it brown like one person mentioned, and the banana taste was a tad mild, but definitely there, for me. I would make this again, but hope I can find a way to soften up the outside to make it more to my liking. It was really easy to make with these instructions though.

Gently push a toothpick/chopstick/skewer into the top of the bread and see if any batter sticks to the toothpick/chopstick/skewer. Make sure to wear oven gloves because the bread pan and bread machine will still be hot. If batter is sticking to the toothpick/chopstick/skewer then it hasn’t completely cooked. Place the bread loaf pan back into the still warm bread machine for another 5 minutes. After the 5 minutes, remove the bread pan and test the banana bread again with a toothpick/chopstick/skewer. FYI – Given variability in banana sizes, banana breads tend to have more moistness variability than many other recipes. Moreover, since most bread machines turn off automatically after a specified time and you can not adjust the baking temperature, they are little less flexible than ovens in dealing with baking “variances”. Thus the need to use the toothpick test if the banana bread top looks too moist (or you can skip the toothpick test and just leave the banana bread in the still warm bread machine for an extra 5 minutes if the top looks a little too moist).

Please mash the ripe bananas with a fork before adding them to the bread pan. Ripe bananas are soft and are very easy to mash. Most bread machine paddles/mixers will not mash large banana chunks properly (just stirs them around) and the banana bread will not come out correctly if you have not mashed the bananas. Also be aware that some people go beyond just scraping the sides of the bread pan in order to avoid any leftover flour sticking to the sides of their finished banana bread. They will first mix all of the ingredients by hand in a mixing bowl and then add it to the bread machine bread pan (versus adding all of the ingredients to the bread pan and letting the bread machine mix everything). While this is an extra step, premixing the ingredients greatly reduces the potential for any unwanted small flour “clumps” and/or flour sticking to the sides of the finished banana bread. After hand mixing the ingredients, you should just follow the rest of the recipe instructions (i.e. enter proper bread machine settings and so on). However, always remember to add the ingredients (or hand mixed batter) to the bread pan when the bread pan is out of the bread machine and the bread machine is unplugged.

Excellent! I could tell from the recipe that there would not be enough filling without the walnuts and since I planned to omit them I too doubled the cinnamon/sugar mixture. When baked and thickly sliced the texture of this bread is smooth and soft the sticky cinnamon-spicy sweetness oozes out and it creates the perfect ratio of bread to filling. The kids slathered their slices in homemade apple butter a friend gave us for Christmas but even plain this stuff is heavenly!

I know I have a winning recipe on my hands when my husband and 3 year old start snacking on it as soon as its cool enough to handle and immediatly ask me to make it again soon. This bread turned out so well, just like a cinnamon roll in loaf form. I don't have a bread machine so I did have to adjust the directions for use in my stand mixer. I combined the white sugar and warm milk in my mixer bowl and added the yeast to proof. Once proofed I mixed in the eggs and softened butter until the butter was broken up into chunks and the eggs were mixed in. I then added the flour/salt that had already been mixed to combine. I let the dough hook do all the kneading and when finished I lightly oiled the bowl and the top of the dough, covered with plastic wrap and let it rise until doubled. From that point on I followed the recipe except for doubling the sugar/cinnamon part of the filling. I made one loaf with walnuts and one without since my husband isn't crazy about them. We can't wait to try this bread toasted tomorrow morning. The only change I'll make next time is to brush the dough with an egg wash before baking so it comes out nice and glossy. Highly recommend!

Same thing happened to my first loaf. I thought I had done something wrong. I suspect bread machines vary. Mine heats while the ingredients are mixing. I suspect that is why the chocolate chips melted. My loaf was underdone and caved in the middle. As if a hunk of mashed banana didn’t mix completely. I’m really assuming the castropy happened because of the bread machine. It did smell amazing while cooking. I wanted to throw my loaf out as well but hate wasting food. Simply; I gave it to someone else. Made it again the old fashioned way… In the oven. Better result.
