I have been throwing all my ripened bananas in the freezer now for well over 2 years. When I need to use banana, I just go to the freezer and pull out what I need. They thaw ridiculously fast and I think the texture of a frozen banana is so much easier to work with than a ripened banana that has not been frozen. I wish I would have known about this ten years ago. I have no idea how many bananas I have tossed in the garbage.
I have made this bread several times. The results have been great each time, and it taste just like a cake. I’ve received positive reviews about this bread from others. My only suggestion is to add the chips after the liquid ingredients, as they melted when I added them with the dry ingredients the first time I made this bread. Excellent! I could tell from the recipe that there would not be enough filling without the walnuts and since I planned to omit them I too doubled the cinnamon/sugar mixture. When baked and thickly sliced the texture of this bread is smooth and soft the sticky cinnamon-spicy sweetness oozes out and it creates the perfect ratio of bread to filling. I used this recipe in the oven and not the bread machine and it turned out great. I mixed the bananas, egg, oil together, then added the sugar and baking soda/powder (mix very well to get slightly fluffy). (I usually use more than the suggested # of bananas, by at least 1/2 extra banana) Then added all that to a larger bowl with the flour and some cinnamon. Baked for 40ish minutes at 350-375 (depending on your oven). Took it out when the toothpick came out clean. I also added blueberries to the mix. Very tasty. Light and Fluffy.

This banana bread recipe turns out really well in a bread maker and it's a great way to to get rid of overripe bananas sitting in the bowl. In our family nobody touches bananas if the skin has any sign of black. I guess we all worry that they are spoiled. So, rather than wasting them, into the bread maker they go.

This turned out delicious! Super Moist. Not overcooked; not dry; just perfect. I have a Cuisinart bread maker and didn’t have a “Quick Bread” button so I used the “Ultra Fast” setting for 1 1/2 pounds at 2:03 hrs and added 7 tbsp of water since I live in high altitude 7,100 ft (1 Tbsp/1,000 ft). I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them.

I’ve tweaked my Banana Bread recipe with substitutions for oil (applesauce) and buttermilk (Greek Yogurt). The butter in this one gives me pause; have you ever substituted the fat content in bread machine recipes with applesauce or something else? I’d be curious how they turned out. I’m not sure my husband would be willing to let the bananas be Guinea pigs, so to speak. He buys bananas and purposely lets them go too ripe so I have to make banana bread, lol!

When you bake chocolate chips in a banana bread in the oven, the don’t melt and make the bread brown. You can see in my photo that mine did not do that in my bread machine either. Even if they did melt, how would all that chocolate flavour disappear? Also, I’m not sure how your bananas were flavourless. We quite enjoyed the recipe, and the above commenter (April) said it worked perfectly in her machine. Sorry it didn’t work for you. 🙁

In order to make bread machine banana bread, you need to use the Quick Bread setting. Don’t be fooled by setting names like Quick, Rapid or Express (as these settings are often used for very rapid baking and are not used for quick breads). Therefore, you must check your bread machine’s instructions/manual for the exact setting used for quick breads (i.e. banana bread) on your bread machine. The instructions that came with my (gifted) Hamilton Beach machine included a mixing, kneading, cooking time chart for each setting. I searched and found that one or two other brands also had somewhat similar charts. But most of the machines I researched did not. So, there may be no way to compare settings, and no way to predict outcome from an incomplete bread machine recipe. I even tried to identify the machine used by this author (from the pix of his control panel) but I had no luck. So, I have no idea how the settings on his machine might compare with the settings on mine.

If you have at least 4 pieces of leftover cinnamon-raisin bread, why not make French toast? In a shallow bowl, beat 2 eggs with 1/2 cup milk. Heat a frying pan with a little butter. Dip each slice into the egg mixture, making sure to coat both sides of the bread. Place each slice in the heated pan. Cook for a couple of minutes, or until cooked and lightly toasted, and flip. Serve your French toast warm with slightly heated maple syrup.
Oh rats! I believe it’s because you chose the “sweet bread” setting instead of the “quick bread” setting, Kindra. I did some googling and found this: “The sweet cycle on most bread makers is designed to prepare and bake sweet yeast breads. Don’t get it confused with the quick bread cycle, however. Quick breads don’t contain yeast, so they cook at a different pace, and require no rise time. An example of a quick bread would be something like a banana bread or zucchini bread, without yeast.”
Optional – If you want to make bread machine banana nut bread, you can add 3/4 cup of chopped walnuts to this recipe after the first bread machine mixing cycle and before the second mixing (final mixing). I like to add the chopped walnuts after the first mixing and before the final (second) mixing in order to minimize any mixing “breakage” of the chopped walnuts.
