Please be aware that you MUST scrape down the sides of the bread pan when the machine beeps for add-ins. At this point in the recipe, you will add the chopped nuts, but you may also find dough that isn’t well mixed stuck to the sides and bottom of the pan. Just use a rubber spatula and clean off the unmixed dough as you would in a mixing bowl. Be sure to use rubber or silicone…you don’t want to scratch the pan of your bread machine!

I cannot even remotely recommend this recipe. I followed it exactly, and the bread was just tasteless. The chocolate chips melted and just made the bread brown without adding any flavor. The banana taste was almost non-existent, if I had not seen myself add the bananas, I would not have guessed any bananas were in it. I took three bites, spit out the third and threw the entire loaf in the trash. There was no flavor at all in this! What a waste of good ingredients. Save yourself the trouble, time and expense and don’t try this.

Same thing happened to my first loaf. I thought I had done something wrong. I suspect bread machines vary. Mine heats while the ingredients are mixing. I suspect that is why the chocolate chips melted. My loaf was underdone and caved in the middle. As if a hunk of mashed banana didn’t mix completely. Since the batter for quick bread doesn't require kneading and is best with minimal mixing, you may need to adjust the mixing setting. This is especially true if your bread machine doesn't have a program for quick bread. For example, some machines have a "dough" setting to mix and a separate "bake" setting. Mixing should require just 3 to 5 minutes.
I’m a little surprised so many people had a hard time with this or it didn’t turn out right for them. I’m fairly new to making bread, but I followed the recipe exactly (minus being a tad shy on walnuts), and I didn’t have any problems. I had a little “dust” on one end and side of the loaf where some dry ingredients didn’t get all the way mixed in, but it brushed off and didn’t seem to hurt anything. I didn’t necessarily LOVE this recipe, but it was good. It may just be my bread machine too, but this had a bit more of a crust to the outsides than what I would want on a banana bread. It was my first time making quick bread in my machine too though. That being said, the inside was soft and delicious. I didn’t have any problem with chocolate chips melting and getting mixed into the bread turning it brown like one person mentioned, and the banana taste was a tad mild, but definitely there, for me. I would make this again, but hope I can find a way to soften up the outside to make it more to my liking. It was really easy to make with these instructions though.
Hi There: The problem I had with this receipe is that I have a Black & Decker bread machine. There is no stop button and you can not set the cook time you would like. Once you have picked the bread/ pasta or dough that you want to make that's it the machine does the rest. Indescribably delicious! I usually make banana bread by hand, so I was a touch skeptical about using the bread machine, but it came out dense and golden and smelled wonderful while baking. I began with the recipe Dee provided, then I added an extra banana, 1/2 tsp. ground cinnamon, a splash of vanilla, and in lieu of nuts, a heaping tbsp. of poppy seeds. I also added 4 oz. of plain applesauce (one of those individual cups). I used a Breadman Rapid Deluxe machine, which does not allow you to stop and then bake. Instead, I used the 1 pound setting and the "fruit/nut bread" option. It takes about 3 hours and 15 minutes to produce the loaf, but it mixes and stops and mixes and stops: the actual baking part is about an hour long. The banana bread had a more cakelike than breadlike texture (due to the addition of the applesauce) and was very dense, but oh so good! I love the ease and convenience of this recipe and I will use it often. A word of caution: use a rubber spatula to scrape the corners during the mixing phase to integrate all of the flour (be careful of the machine's mixing paddle), or some of the dry ingredients may get stuck in the corners of the pan. When you bake chocolate chips in a banana bread in the oven, the don’t melt and make the bread brown. You can see in my photo that mine did not do that in my bread machine either. Even if they did melt, how would all that chocolate flavour disappear? Also, I’m not sure how your bananas were flavourless. We quite enjoyed the recipe, and the above commenter (April) said it worked perfectly in her machine. Sorry it didn’t work for you. 🙁

If you have a problem with a banana bread recipe, please make sure that you are following the recipe exactly. You will need to make sure that you are inputting the correct bread machine settings, using the exact ingredient measurements (i.e. don’t eyeball the measurements versus using a measuring cup), using the exact ingredients called for in the recipe (i.e. baking soda/powder versus yeast or all purpose flour versus bread flour), etc. Please don’t “wing” things with recipes unless you are willing to live with your experiments!

This turned out delicious! Super Moist. Not overcooked; not dry; just perfect. I have a Cuisinart bread maker and didn’t have a “Quick Bread” button so I used the “Ultra Fast” setting for 1 1/2 pounds at 2:03 hrs and added 7 tbsp of water since I live in high altitude 7,100 ft (1 Tbsp/1,000 ft). If you are still having trouble finding the quick bread setting, check your bread machine manual for details regarding the cake setting on your machine. Some bread machines have a cake setting that states that they can be used for quick breads (and the mixing & baking will last roughly for 1 hour 40-50 minutes). However, other bread machines have a cake setting that is not designed for quick breads. For example, my bread machine (Sunbeam) has a cake setting (that lasts for 2 hours 50 minutes) and a quick bread setting (that lasts for 1 hour 40 minutes). Therefore, this recipe would probably not work well with the cake setting on my machine. I know this can be super confusing… but always read your bread machine manual and look for the specific setting designed for “quick breads” (that use baking soda/powder).
I’ve tweaked my Banana Bread recipe with substitutions for oil (applesauce) and buttermilk (Greek Yogurt). The butter in this one gives me pause; have you ever substituted the fat content in bread machine recipes with applesauce or something else? I’d be curious how they turned out. I’m not sure my husband would be willing to let the bananas be Guinea pigs, so to speak. He buys bananas and purposely lets them go too ripe so I have to make banana bread, lol!

This is a delicious and super easy way to bake banana bread. I used my Oster brand bread machine on the quick setting and it baked the bread perfectly. About halfway through the baking time I sprinkled some chocolate chips and nuts on top to make it look pretty. Next time I’m going to try using brown sugar instead. I think that would provide a bit of extra flavor and moisture to the loaf.

If the top center of the bread looks too moist when you take it out of the bread machine, you can try the classic baking “toothpick test”. Gently push a toothpick/chopstick/skewer into the top of the bread and see if any batter sticks to the toothpick/chopstick/skewer. Make sure to wear oven gloves because the bread pan and bread machine will still be hot. If batter is sticking to the toothpick/chopstick/skewer then it hasn’t completely cooked. Place the bread loaf pan back into the still warm bread machine for another 5 minutes. After the 5 minutes, remove the bread pan and test the banana bread again with a toothpick/chopstick/skewer. FYI – Given variability in banana sizes, banana breads tend to have more moistness variability than many other recipes. Moreover, since most bread machines turn off automatically after a specified time and you can not adjust the baking temperature, they are little less flexible than ovens in dealing with baking “variances”. Thus the need to use the toothpick test if the banana bread top looks too moist (or you can skip the toothpick test and just leave the banana bread in the still warm bread machine for an extra 5 minutes if the top looks a little too moist).
