I used this recipe in the oven and not the bread machine and it turned out great. I mixed the bananas, egg, oil together, then added the sugar and baking soda/powder (mix very well to get slightly fluffy). (I usually use more than the suggested # of bananas, by at least 1/2 extra banana) Then added all that to a larger bowl with the flour and some cinnamon. Baked for 40ish minutes at 350-375 (depending on your oven). Took it out when the toothpick came out clean. I also added blueberries to the mix. Very tasty. Light and Fluffy.

I’m glad you liked it, Alyssa, and that it turned out well for you. I’m always surprised too, when a recipe that works well for me doesn’t work well for others. I have to think that people perhaps make alterations to the recipe or don’t follow the instructions (even if they *think* they did). Optional – You can also turn this recipe into chocolate chip banana bread or blueberry banana bread. To make bread machine chocolate chip banana bread, you should add 3/4 of a cup of mini semi-sweet chocolate chips after the first mixing is finished and before the second/final mixing has started. I don’t like to use heavier regular chocolate chips because they tend to sink to the bottom of the batter (mini chips seem to spread out better). To make bread machine blueberry banana bread, you should add 3/4 of a cup of frozen blueberries after the first mixing is finished and before the second/final mixing has started. I like to use frozen blueberries because they seem to survive the bread machine mixing process better (less likely to burst) than fresh blueberries.

This cinnamon bread is excellent. I followed the recipe ingredients but made rolls instead of a loaf and added raisins. I LOVE the filling so I doubled the ingredients to satisfy my sweet tooth and I'm glad I did because to my liking there was barely enough to cover both rectangles. I added 1 cup Thomson raisins, soaked for 30 min. in 1/4 cup brandy with a 1/4 tsp sugar sprinkled over them (kills the bitterness) stirring a few times to coat them evenly. The dough is great to work with and not sticky at all. When I sprinkled the raisins over the sugar mix I put a sheet of wax paper to cover it and ran the rolling pin over it lightly a few times to press the mixture into the dough (makes rolling it up easier and less filling leaks out). I rolled it up from the long end and sliced it into 1" pieces and popped them into Pam-sprayed muffin tins. I always brush my rolls with soft butter and sprinkle a little brown sugar over them, about 1/8 tsp on each (to keep some yummy, gooey syrup on the tops). It only took 15 min to turn golden with syrup spread over the tops.Even though I doubled the filling very little of it leaked out. I lifted each to a rack and while still warm I drizzled the tops with basic milk/icing sugar glaze. When they cooled I drizzled a 2nd layer of glaze over the tops as it will not soak into the roll and disappear. Then I ate 4 of them! Indescribably delicious! I usually make banana bread by hand, so I was a touch skeptical about using the bread machine, but it came out dense and golden and smelled wonderful while baking. I began with the recipe Dee provided, then I added an extra banana, 1/2 tsp. ground cinnamon, a splash of vanilla, and in lieu of nuts, a heaping tbsp. of poppy seeds. I also added 4 oz. of plain applesauce (one of those individual cups). I used a Breadman Rapid Deluxe machine, which does not allow you to stop and then bake. Instead, I used the 1 pound setting and the "fruit/nut bread" option. It takes about 3 hours and 15 minutes to produce the loaf, but it mixes and stops and mixes and stops: the actual baking part is about an hour long. The banana bread had a more cakelike than breadlike texture (due to the addition of the applesauce) and was very dense, but oh so good! I love the ease and convenience of this recipe and I will use it often. A word of caution: use a rubber spatula to scrape the corners during the mixing phase to integrate all of the flour (be careful of the machine's mixing paddle), or some of the dry ingredients may get stuck in the corners of the pan. Cinnamon raisin bread is a lightly sweet yeast bread scented with cinnamon and studded with plump dried fruit. It's especially delicious for breakfast spread with butter or cream cheese. By using a bread machine, it also frees you up to make other brunch dishes like an egg casserole. Leftovers are excellent toasted or turned into delicious cinnamon French toast, and this bread freezes well, too.
Have an older style bread machiene. Sunbeam. Epic fail. Chose ‘sweet option’ and ‘rapid’ and ‘medium’ after what seemed like 2hrs of prepping,rising etc. it finally started baking. While the outsides of bread were great,it left a big liquid hole in the middle and top. It has a ‘bake delay’ setting but can only be used b4 starting cycle. Now it is in my oven trying to bake rest of the way. What crumbs i ate so far tasted good.

If you have lost or misplaced your bread machine instructions, you should check online. Many bread machine manufacturers have placed their instruction manuals on their websites. Just do a search for your bread machine manufacturer and include the word “instructions” or “manual” (i.e. XYZ bread machine instructions). The online manufacturer instructions should tell you if your bread machine can handle quick bread (i.e. banana bread) recipes.
Oh my goodness this turned out DIVINE. I had some friends over, one of who is a bit of an instagram celebrity when it comes to baking, and she was very impressed! Absolutely delicious – I think next time I will try less sugar (as I used two black bananas so sweet enough), and try add some vanilla as someone suggested above. My only slight imperfection was that their seemed to be a pooling of choc chips in the corners. Will try do a swoop with a spatula prior to the baking part next time. Thanks

I added another egg and about 1/4 cup of olive oil and it came out awesome. I read some of the comments about it being dry. Tbh i thought reading the recipe they accidentally forgot to put oil on there. In all the other recipes i have done has about a 1/4 cup of either oil or softened butter. I added it anyways before venturing down to the comment sections when i put it in the machine.

However, oven-baked banana breads are a little more forgiving as you can stir more gently if needed (and thus less crushed fruit or shattered chocolate chips).
