Oh my goodness this turned out DIVINE. I had some friends over, one of who is a bit of an instagram celebrity when it comes to baking, and she was very impressed! Absolutely delicious – I think next time I will try less sugar (as I used two black bananas so sweet enough), and try add some vanilla as someone suggested above. My only slight imperfection was that their seemed to be a pooling of choc chips in the corners. Will try do a swoop with a spatula prior to the baking part next time. Flour sticking to the sides of your bread machine banana bread? Unfortunately, bread machines have a harder time mixing moister quick bread recipes (versus drier sandwich bread dough). Therefore, after the first mixing cycle has fully stopped (and before the second & final mixing cycle has begun), I like to scrape the sides of the bread pan with a flexible silicon spatula (not a metal spatula). This loosens any flour that may be sticking to the sides of the bread pan (because a bread machine mixing “paddle” doesn’t quite reach the sides of the bread pan). For safety purposes, I do not scrape the sides of the bread pan when the mixing blade is moving. In addition, people should not stick their hands inside bread machines. Moreover, people should always wear oven mitts when dealing with a bread machine because the bread pan & bread machine interior can get quite hot.
I’m a little surprised so many people had a hard time with this or it didn’t turn out right for them. I’m fairly new to making bread, but I followed the recipe exactly (minus being a tad shy on walnuts), and I didn’t have any problems. I had a little “dust” on one end and side of the loaf where some dry ingredients didn’t get all the way mixed in, but it brushed off and didn’t seem to hurt anything. I didn’t necessarily LOVE this recipe, but it was good. It may just be my bread machine too, but this had a bit more of a crust to the outsides than what I would want on a banana bread. It was my first time making quick bread in my machine too though. That being said, the inside was soft and delicious. I didn’t have any problem with chocolate chips melting and getting mixed into the bread turning it brown like one person mentioned, and the banana taste was a tad mild, but definitely there, for me. I would make this again, but hope I can find a way to soften up the outside to make it more to my liking. It was really easy to make with these instructions though.
I have made this bread several times. The results have been great each time, and it taste just like a cake. I’ve received positive reviews about this bread from others. My only suggestion is to add the chips after the liquid ingredients, as they melted when I added them with the dry ingredients the first time I made this bread. The bread came out dark, but it was still good.

Delicious! Instead of spreading butter before rolling it up, I tried a method I saw online and mixed the cinnamon mixture with egg which acts as a binder. This keeps the layers from separating when it is baked. I did use too much egg and my mixture was too runny. Next time I will use 1-2 Tablespoons of egg instead of a whole one. There will definitely be a next time! Read More
I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them. The instructions that came with my (gifted) Hamilton Beach machine included a mixing, kneading, cooking time chart for each setting. I searched and found that one or two other brands also had somewhat similar charts. But most of the machines I researched did not. So, there may be no way to compare settings, and no way to predict outcome from an incomplete bread machine recipe. I even tried to identify the machine used by this author (from the pix of his control panel) but I had no luck. So, I have no idea how the settings on his machine might compare with the settings on mine.

I’ve tweaked my Banana Bread recipe with substitutions for oil (applesauce) and buttermilk (Greek Yogurt). The butter in this one gives me pause; have you ever substituted the fat content in bread machine recipes with applesauce or something else? I’d be curious how they turned out. I’m not sure my husband would be willing to let the bananas be Guinea pigs, so to speak. He buys bananas and purposely lets them go too ripe so I have to make banana bread, lol!

Banana bread may be served at tea time or at breakfast, although there is no rule as to when you may eat it. This banana bread recipe turns out really well in a bread maker and it's a great way to to get rid of overripe bananas sitting in the bowl. In our family nobody touches bananas if the skin has any sign of black. I guess we all worry that they are spoiled. So, rather than wasting them, into the bread maker they go.

Ok, this bread turned out so yummy…. however, my machine doesn’t work like most I guess. It’s a very basic West Bend one and has very few options. So I followed the recipe (except I didn’t have the walnuts so it got double chocolate chips!) and it ran through the rapid cycle which took 3 hrs on my machine. But it was still dough inside. So I baked it for another 25 mins at 400. I’ve decided that I’m still going to use this recipe for baking the bread though. It was so good.
I have used this same recipe for years, except I use 3 Tablespoons of oil instead of the melted butter. I am going to try the butter once and see if I like it better. One thing for the person who thought the bread was tasteless is make sure you are using ripe bananas, the blacker the better! I have an Oster machine and it does not have a quick bread setting. What I do is use the dough setting and mix for 5 minutes using a rubber spatula to get the flour off the sides of the pan, and then press bake and bake it for about an hour and ten minutes.I then take the pan out of the machine and let the bread set for about 10 minutes before taking it out of the pan. I have made at least 100 loaves of this bread and everyone loves it!zojirushi home bakery 1 loaf for bb-st10-wa
If you have at least 4 pieces of leftover cinnamon-raisin bread, why not make French toast? In a shallow bowl, beat 2 eggs with 1/2 cup milk. Heat a frying pan with a little butter. Dip each slice into the egg mixture, making sure to coat both sides of the bread. Place each slice in the heated pan. Cook for a couple of minutes, or until cooked and lightly toasted, and flip. Serve your French toast warm with slightly heated maple syrup.
This works equally well baked. I wanted to try making it in the bread machine but my machine was not working on sweet bread so I took it back out and mixed it in a bowl, put it in a loaf pan and baked it in my toaster oven.I threw another batch together and added chocolate chips and put that in my convection oven. 350 in the toaster oven and 325 in the convection oven. approx 45 min. to an hour and it as done.
Producing a successful loaf of bread is an exercise in chemistry and physics. As far as I can tell, successful results comes down to the controlling the mass of the ingredients, interaction between the active ingredients, and the time and wattage of the cooking cycle. Any variation from those specified (or unspecified) by the recipe’s author could result in a disappointing result.
This turned out delicious! Super Moist. Not overcooked; not dry; just perfect. I have a Cuisinart bread maker and didn’t have a “Quick Bread” button so I used the “Ultra Fast” setting and added 7 tbsp of water since I live in high altitude 7,100 ft (1 Tbsp/1,000 ft). The only thing that went wrong we’re the chocolate chips totally melted. Next time I will add them later in the “add cycle”. Thank you for sharing. However, oven-baked banana breads are a little more forgiving as you can stir more gently if needed (and thus less crushed fruit or shattered chocolate chips). In addition, oven-baked banana breads will not have a bread machine mixing paddle “hole” in the bottom. For oven-baked banana bread recipes, please visit our Easy Banana Bread Variations section.
