I used this recipe in the oven and not the bread machine and it turned out great. I mixed the bananas, egg, oil together, then added the sugar and baking soda/powder (mix very well to get slightly fluffy). (I usually use more than the suggested # of bananas, by at least 1/2 extra banana) Then added all that to a larger bowl with the flour and some cinnamon. Baked for 40ish minutes at 350-375 (depending on your oven). Took it out when the toothpick came out clean. I also added blueberries to the mix. Very tasty. Light and Fluffy.

If you have at least 4 pieces of leftover cinnamon-raisin bread, why not make French toast? In a shallow bowl, beat 2 eggs with 1/2 cup milk. Heat a frying pan with a little butter. Dip each slice into the egg mixture, making sure to coat both sides of the bread. Place each slice in the heated pan. Cook for a couple of minutes, or until cooked and lightly toasted, and flip. Serve your French toast warm with slightly heated maple syrup.

Be careful when removing the banana bread from the bread loaf pan. Banana breads are much softer than sandwich-type bread loaves. Therefore, they can break or “dent” more easily when you remove them from the bread loaf pan. When removing the banana bread from the bread pan, you should also be careful of the movable bread pan handle (because it can swing into the banana bread and cause damage).

Oh my goodness this turned out DIVINE. I had some friends over, one of who is a bit of an instagram celebrity when it comes to baking, and she was very impressed! Absolutely delicious – I think next time I will try less sugar (as I used two black bananas so sweet enough), and try add some vanilla as someone suggested above. My only slight imperfection was that their seemed to be a pooling of choc chips in the corners. Will try do a swoop with a spatula prior to the baking part next time. Thanks

I know I have a winning recipe on my hands when my husband and 3 year old start snacking on it as soon as its cool enough to handle and immediatly ask me to make it again soon. This bread turned out so well, just like a cinnamon roll in loaf form. I don't have a bread machine so I did have to adjust the directions for use in my stand mixer. I combined the white sugar and warm milk in my mixer bowl and added the yeast to proof. Once proofed I mixed in the eggs and softened butter until the butter was broken up into chunks and the eggs were mixed in. I then added the flour/salt that had already been mixed to combine. I let the dough hook do all the kneading and when finished I lightly oiled the bowl and the top of the dough, covered with plastic wrap and let it rise until doubled. From that point on I followed the recipe except for doubling the sugar/cinnamon part of the filling. I made one loaf with walnuts and one without since my husband isn't crazy about them. We can't wait to try this bread toasted tomorrow morning. The only change I'll make next time is to brush the dough with an egg wash before baking so it comes out nice and glossy. Highly recommend! The only thing I did was sub the butter for the oil. When I first start making recipes with my bread machine, I did a little research and everything I could get my hands on said to use oil instead of butter (save the butter for the outside when you are eating it–not the inside when you are cooking it) and the reasons for it (can’t recall the reasons listed, but they made sense and I remembered the mantra!). I do use bread flour though.

Oh rats! I believe it’s because you chose the “sweet bread” setting instead of the “quick bread” setting, Kindra. I did some googling and found this: “The sweet cycle on most bread makers is designed to prepare and bake sweet yeast breads. Don’t get it confused with the quick bread cycle, however. Quick breads don’t contain yeast, so they cook at a different pace, and require no rise time. An example of a quick bread would be something like a banana bread or zucchini bread, without yeast.”
I have made this bread several times. The results have been great each time, and it taste just like a cake. I’ve received positive reviews about this bread from others. My only suggestion is to add the chips after the liquid ingredients, as they melted when I added them with the dry ingredients the first time I made this bread. The bread came out dark, but it was still good.
Add the eggs, butter & bananas into the bread pan and then add the other ingredients. Try to follow the order of the ingredients listed above so that liquid ingredients are placed in the bread pan first and the dry ingredients second. Be aware that the bread pan should be removed from the bread machine before you start to add any ingredients. This helps to avoid spilling any material inside the bread machine. The bread machine should always be unplugged when removing the bread pan.
I got a bread machine for Christmas and this is ALWAYS my go-to black banana recipe!! My quick bread setting is 1hr 43min so I make it the night before and it’s ready for breakfast in the morning. My kids are always thrilled. I do reduce the sugar to 1/3c and use half whole wheat flour (no walnuts) to try for a more wholesome recipe and it’s just as good!! <3

Indescribably delicious! I usually make banana bread by hand, so I was a touch skeptical about using the bread machine, but it came out dense and golden and smelled wonderful while baking. I began with the recipe Dee provided, then I added an extra banana, 1/2 tsp. ground cinnamon, a splash of vanilla, and in lieu of nuts, a heaping tbsp. of poppy seeds. I also added 4 oz. of plain applesauce (one of those individual cups). I used a Breadman Rapid Deluxe machine, which does not allow you to stop and then bake. Instead, I used the 1 pound setting and the "fruit/nut bread" option. It takes about 3 hours and 15 minutes to produce the loaf, but it mixes and stops and mixes and stops: the actual baking part is about an hour long. The banana bread had a more cakelike than breadlike texture (due to the addition of the applesauce) and was very dense, but oh so good! I love the ease and convenience of this recipe and I will use it often. A word of caution: use a rubber spatula to scrape the corners during the mixing phase to integrate all of the flour (be careful of the machine's mixing paddle), or some of the dry ingredients may get stuck in the corners of the pan. Enjoy!

I’m a little surprised so many people had a hard time with this or it didn’t turn out right for them. I’m fairly new to making bread, but I followed the recipe exactly (minus being a tad shy on walnuts), and I didn’t have any problems. I had a little “dust” on one end and side of the loaf where some dry ingredients didn’t get all the way mixed in, but it brushed off and didn’t seem to hurt anything. I didn’t necessarily LOVE this recipe, but it was good. It may just be my bread machine too, but this had a bit more of a crust to the outsides than what I would want on a banana bread. It was my first time making quick bread in my machine too though. That being said, the inside was soft and delicious. I didn’t have any problem with chocolate chips melting and getting mixed into the bread turning it brown like one person mentioned, and the banana taste was a tad mild, but definitely there, for me. I would make this again, but hope I can find a way to soften up the outside to make it more to my liking. It was really easy to make with these instructions though.

I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them.
