In order to make bread machine banana bread, you need to use the Quick Bread setting. Thank you for the recipe! I made the bread using bread flour in my cuisinart cbk-110. I followed the recipe as is except omitted walnuts. I also used ripe bananas. I feel that I could have used another banana or banana flavored syrup to give it more flavoring. Also, definitely going to double up on the chocolate chips. On the machine, instead of rapid cycle, I used “cake” program which goes just at 1hr 52 mins. I had to add another 30 mins. Cooled it on wire rack for 2 hours and it was still pretty warm on the inside. Made few slices of half of the loaf and 3 hours later, sliced the rest of the loaf. It wasn’t dry at all. If I double up on chocolate chips and add extra banana, do I need to make any changes to the recipe?
I’m SO happy with this recipe. Have tried others that didn’t cook all the way through. But this turned out fluffy and moist! My substitutions worked out great- packed brown sugar and Bob’s Red Mill 1 to 1 Gluten Free baking flour. I was nervous about not using bread flour but it turned out wonderfully on the cake setting for 1:40. Will be making again! Only thing I’ll slightly tweak next time is opening up my bread machine during mixing to scrape some of the flour off the sides to make sure it all incorporates since I had a little bit of flour on the sides of the bread. Not a big deal at all though, still very tasty! Thank you.

I used this recipe in the oven and not the bread machine and it turned out great. I mixed the bananas, egg, oil together, then added the sugar and baking soda/powder (mix very well to get slightly fluffy). (I usually use more than the suggested # of bananas, by at least 1/2 extra banana) Then added all that to a larger bowl with the flour and some cinnamon. Baked for 40ish minutes at 350-375 (depending on your oven). Took it out when the toothpick came out clean. I also added blueberries to the mix. Very tasty. This is a delicious and super easy way to bake banana bread. I used my Oster brand bread machine on the quick setting and it baked the bread perfectly. About halfway through the baking time I sprinkled some chocolate chips and nuts on top to make it look pretty. Next time I’m going to try using brown sugar instead. I think that would provide a bit of extra flavor and moisture to the loaf.

Indescribably delicious! I usually make banana bread by hand, so I was a touch skeptical about using the bread machine, but it came out dense and golden and smelled wonderful while baking. I began with the recipe Dee provided, then I added an extra banana, 1/2 tsp. ground cinnamon, a splash of vanilla, and in lieu of nuts, a heaping tbsp. of poppy seeds. I also added 4 oz. of plain applesauce (one of those individual cups). I used a Breadman Rapid Deluxe machine, which does not allow you to stop and then bake. Instead, I used the 1 pound setting and the "fruit/nut bread" option. It takes about 3 hours and 15 minutes to produce the loaf, but it mixes and stops and mixes and stops: the actual baking part is about an hour long. The banana bread had a more cakelike than breadlike texture (due to the addition of the applesauce) and was very dense, but oh so good! I love the ease and convenience of this recipe and I will use it often. A word of caution: use a rubber spatula to scrape the corners during the mixing phase to integrate all of the flour (be careful of the machine's mixing paddle), or some of the dry ingredients may get stuck in the corners of the pan. My spam filter might have caught your first message, Becca. Sorry you didn’t enjoy the recipe. I can’t make any sense of what might have happened. When you bake chocolate chips in a banana bread in the oven, the don’t melt and make the bread brown. You can see in my photo that mine did not do that in my bread machine either. Even if they did melt, how would all that chocolate flavour disappear? Also, I’m not sure how your bananas were flavourless. We quite enjoyed the recipe, and the above commenter (April) said it worked perfectly in her machine. Sorry it didn’t work for you. 🙁
Yes. Bread machine banana bread is a sweet quick bread. Quick breads are muffin-like “breads” made with baking soda and/or baking powder. Quick breads are not sandwich-type breads that use yeast to rise. Other sweet quick bread recipes that use a bread machine include cornbread and pumpkin bread. Be careful when removing the banana bread from the bread loaf pan. Banana breads are much softer than sandwich-type bread loaves. Therefore, they can break or “dent” more easily when you remove them from the bread loaf pan. When removing the banana bread from the bread pan, you should also be careful of the movable bread pan handle (because it can swing into the banana bread and cause damage).
Moreover, in many bread machines, the “sweet bread” setting is used for very sweet breads that use yeast (not baking soda/powder). A tad confusing! Flour sticking to the sides of your bread machine banana bread? Unfortunately, bread machines have a harder time mixing moister quick bread recipes (versus drier sandwich bread dough). Therefore, after the first mixing cycle has fully stopped (and before the second & final mixing cycle has begun), I like to scrape the sides of the bread pan with a flexible silicon spatula (not a metal spatula). This loosens any flour that may be sticking to the sides of the bread pan (because a bread machine mixing “paddle” doesn’t quite reach the sides of the bread pan). For safety purposes, I do not scrape the sides of the bread pan when the mixing blade is moving. In addition, people should not stick their hands inside bread machines. Moreover, people should always wear oven mitts when dealing with a bread machine because the bread pan & bread machine interior can get quite hot.
Select Sweet and Light settings on your machine and add raisins as per your manufacturer’s instructions. They can be added in with everything else. Start your bread machine. After the first kneading cycle is over, the bread should be smooth and stretchy. It should feel dry when you touch it. If necessary, add flour by the tablespoon to adjust the bread.

I know I have a winning recipe on my hands when my husband and 3 year old start snacking on it as soon as its cool enough to handle and immediatly ask me to make it again soon. This bread turned out so well, just like a cinnamon roll in loaf form. I don't have a bread machine so I did have to adjust the directions for use in my stand mixer. I combined the white sugar and warm milk in my mixer bowl and added the yeast to proof. Once proofed I mixed in the eggs and softened butter until the butter was broken up into chunks and the eggs were mixed in. I then added the flour/salt that had already been mixed to combine. I let the dough hook do all the kneading and when finished I lightly oiled the bowl and the top of the dough, covered with plastic wrap and let it rise until doubled. From that point on I followed the recipe except for doubling the sugar/cinnamon part of the filling. I made one loaf with walnuts and one without since my husband isn't crazy about them. We can't wait to try this bread toasted tomorrow morning. The only change I'll make next time is to brush the dough with an egg wash before baking so it comes out nice and glossy. Highly recommend! Just to add some info I found interesting. When they call for using Quick Bread setting .. that is NOT Super Rapid cycle which is for breads with shorter rising times. However, you can use the Cake cycle which is used for NON - Yeast Breads. I am about to try a recipes that calls for all the same above ingredients except it has 1/3 melted butter and 1/2 cup milk, 1/2 cup nuts , 1/2 cup chocolate chips., only 2 Bananas. and 1/2 tsp salt. Hope it works.
Optional – If you want to make bread machine banana nut bread, you can add 3/4 cup of chopped walnuts to this recipe after the first bread machine mixing cycle and before the second mixing (final mixing). I like to add the chopped walnuts after the first mixing and before the final (second) mixing in order to minimize any mixing “breakage” of the chopped walnuts.
Talk about your adventures in bread making! Next time I’ll know to look at my machine settings BEFORE I mix all the ingredients :)) My Oster does not have a Quick Bread setting. Taking the advice of another poster, I mixed the batter on the Basic setting for 5 minutes scraping the sides and as much of the bottom as I could. For some reason my Bake cycle would only set for one hour (I’m going to have to find a site with the instruction manual as it was lost in a move), so I Baked the bread for one hour. At this point I would recommend you test the bread for doneness with a skewer. I Baked it for another 10 minutes (using my kitchen timer since I had to set the machine for one hour) and the bottom and sides were almost too done. Also next time, I’ll remember to take the paddle out after mixing. Bread turned out delish with a cuppa, was going to share but maybe not 🙂 My chips did not melt, I wonder if the problem for the melted chips poster was with the chips themselves, and I did use bread flour.

Optional – You can also turn this recipe into chocolate chip banana bread or blueberry banana bread. To make bread machine chocolate chip banana bread, you should add 3/4 of a cup of mini semi-sweet chocolate chips after the first mixing is finished and before the second/final mixing has started. I don’t like to use heavier regular chocolate chips because they tend to sink to the bottom of the batter (mini chips seem to spread out better). To make bread machine blueberry banana bread, you should add 3/4 of a cup of frozen blueberries after the first mixing is finished and before the second/final mixing has started. I like to use frozen blueberries because they seem to survive the bread machine mixing process better (less likely to burst) than fresh blueberries.
I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them. Delicious! Instead of spreading butter before rolling it up, I tried a method I saw online and mixed the cinnamon mixture with egg which acts as a binder. This keeps the layers from separating when it is baked. I did use too much egg and my mixture was too runny. Next time I will use 1-2 Tablespoons of egg instead of a whole one. There will definitely be a next time!
Have an older style bread machiene. Sunbeam. Epic fail. Chose ‘sweet option’ and ‘rapid’ and ‘medium’ after what seemed like 2hrs of prepping,rising etc. it finally started baking. While the outsides of bread were great,it left a big liquid hole in the middle and top. It has a ‘bake delay’ setting but can only be used b4 starting cycle. Now it is in my oven trying to bake rest of the way. What crumbs i ate so far tasted good.
