Talk about your adventures in bread making! Next time I’ll know to look at my machine settings BEFORE I mix all the ingredients :)) My Oster does not have a Quick Bread setting. Taking the advice of another poster, I mixed the batter on the Basic setting for 5 minutes scraping the sides and as much of the bottom as I could. For some reason my Bake cycle would only set for one hour (I’m going to have to find a site with the instruction manual as it was lost in a move), so I Baked the bread for one hour. At this point I would recommend you test the bread for doneness with a skewer. I Baked it for another 10 minutes (using my kitchen timer since I had to set the machine for one hour) and the bottom and sides were almost too done. Also next time, I’ll remember to take the paddle out after mixing. Bread turned out delish with a cuppa, was going to share but maybe not 🙂 My chips did not melt, I wonder if the problem for the melted chips poster was with the chips themselves, and I did use bread flour.
Optional – You can also turn this recipe into chocolate chip banana bread or blueberry banana bread. To make bread machine chocolate chip banana bread, you should add 3/4 of a cup of mini semi-sweet chocolate chips after the first mixing is finished and before the second/final mixing has started. I don’t like to use heavier regular chocolate chips because they tend to sink to the bottom of the batter (mini chips seem to spread out better). To make bread machine blueberry banana bread, you should add 3/4 of a cup of frozen blueberries after the first mixing is finished and before the second/final mixing has started. I like to use frozen blueberries because they seem to survive the bread machine mixing process better (less likely to burst) than fresh blueberries.
I got a bread machine for Christmas and this is ALWAYS my go-to black banana recipe!! My quick bread setting is 1hr 43min so I make it the night before and it’s ready for breakfast in the morning. My kids are always thrilled. I do reduce the sugar to 1/3c and use half whole wheat flour (no walnuts) to try for a more wholesome recipe and it’s just as good!! <3

Making this right now in my Hamilton Beach model# 29882 machine. Luckily I was watching as it starting mixing because the egg/banana/milk slurry was just spinning in the center while most of the flour was staying put on the edges! The key to great banana bread is… RIPE bananas!!! If you use bananas that are hard & yellow or even worse green, they will contain too much starch and not enough natural sugars. As bananas ripen, they convert this starch into sugar. According to Wikipedia, “The greener, less ripe bananas contain higher levels of starch and, consequently, have a “starchier” taste. On the other hand, yellow bananas taste sweeter due to higher sugar concentrations”. FYI – You will know if a banana is ripe when it is soft and shows small brown & black spots on the yellow exterior of the banana.
Excellent! I could tell from the recipe that there would not be enough filling without the walnuts and since I planned to omit them I too doubled the cinnamon/sugar mixture. When baked and thickly sliced the texture of this bread is smooth and soft the sticky cinnamon-spicy sweetness oozes out and it creates the perfect ratio of bread to filling. Same thing happened to my first loaf. I thought I had done something wrong. I suspect bread machines vary. Mine heats while the ingredients are mixing. I suspect that is why the chocolate chips melted. My loaf was underdone and caved in the middle. As if a hunk of mashed banana didn’t mix completely. I’m really assuming the castropy happened because of the bread machine. It did smell amazing while cooking. I wanted to throw my loaf out as well but hate wasting food. Simply; I gave it to someone else. Made it again the old fashioned way… In the oven. Better result.

Delicious! Instead of spreading butter before rolling it up, I tried a method I saw online and mixed the cinnamon mixture with egg which acts as a binder. This keeps the layers from separating when it is baked. I did use too much egg and my mixture was too runny. Next time I will use 1-2 Tablespoons of egg instead of a whole one. There will definitely be a next time!
Select Sweet and Light settings on your machine and add raisins as per your manufacturer’s instructions. They can be added in with everything else. Start your bread machine. After the first kneading cycle is over, the bread should be smooth and stretchy. It should feel dry when you touch it. If necessary, add flour by the tablespoon to adjust the bread.
Since the batter for quick bread doesn't require kneading and is best with minimal mixing, you may need to adjust the mixing setting. This is especially true if your bread machine doesn't have a program for quick bread. For example, some machines have a "dough" setting to mix and a separate "bake" setting. Mixing should require just 3 to 5 minutes.

When the bread machine has finished baking the bread, unplug the bread machine, remove the bread pan and place it on a wooden cutting board. Let the bread stay within the bread loaf container for 10 minutes before you remove it from the bread loaf container. Use oven mitts when removing the bread machine container (bread loaf pan) because it will be very hot!
