Be careful when removing the banana bread from the bread loaf pan. Banana breads are much softer than sandwich-type bread loaves. Therefore, they can break or “dent” more easily when you remove them from the bread loaf pan. If you are still having trouble finding the quick bread setting, check your bread machine manual for details regarding the cake setting on your machine. Some bread machines have a cake setting that states that they can be used for quick breads (and the mixing & baking will last roughly for 1 hour 40-50 minutes). However, other bread machines have a cake setting that is not designed for quick breads. For example, my bread machine (Sunbeam) has a cake setting (that lasts for 2 hours 50 minutes) and a quick bread setting (that lasts for 1 hour 40 minutes). Therefore, this recipe would probably not work well with the cake setting on my machine. I know this can be super confusing… but always read your bread machine manual and look for the specific setting designed for “quick breads” (that use baking soda/powder).

Delicious! Instead of spreading butter before rolling it up, I tried a method I saw online and mixed the cinnamon mixture with egg which acts as a binder. This keeps the layers from separating when it is baked. I did use too much egg and my mixture was too runny. Next time I will use 1-2 Tablespoons of egg instead of a whole one. There will definitely be a next time!

For what it’s worth, please be aware that no two bread machine models are alike. If your machine is not identical to the authors, your results WILL BE different. Hi There: The problem I had with this receipe is that I have a Black & Decker bread machine. There is no stop button and you can not set the cook time you would like. Once you have picked the bread/ pasta or dough that you want to make that's it the machine does the rest. This works equally well baked. I wanted to try making it in the bread machine but my machine was not working on sweet bread so I took it back out and mixed it in a bowl, put it in a loaf pan and baked it in my toaster oven.I threw another batch together and added chocolate chips and put that in my convection oven. 350 in the toaster oven and 325 in the convection oven. approx 45 min. to an hour and it as done.
Enter the bread machine settings (Quick Bread, Light Color, 2 lb) and press the start button. FYI – Before making this recipe, please READ the tips section below for more information regarding the Quick Bread setting. This setting can be a little confusing on some bread machines. If you do not use the correct settings, you will have trouble with bread machine recipes (i.e. potentially under or overcooked).
I’m SO happy with this recipe. Have tried others that didn’t cook all the way through. But this turned out fluffy and moist! My substitutions worked out great- packed brown sugar and Bob’s Red Mill 1 to 1 Gluten Free baking flour. I was nervous about not using bread flour but it turned out wonderfully on the cake setting for 1:40. Will be making again! Only thing I’ll slightly tweak next time is opening up my bread machine during mixing to scrape some of the flour off the sides to make sure it all incorporates since I had a little bit of flour on the sides of the bread. Not a big deal at all though, still very tasty! Thank you.

I made this yesterday. It came out perfectly. The only difference from the original recipe was that I used chocolate chunks instead of chocolate chips because it’s what I had in the house. I wouldn’t recommend it because they migrated to the edges. And I added 1/2 teaspoon of vanilla extract. My wife doesn’t like bananas or walnuts and she loved it.
Indescribably delicious! I usually make banana bread by hand, so I was a touch skeptical about using the bread machine, but it came out dense and golden and smelled wonderful while baking. I began with the recipe Dee provided, then I added an extra banana, 1/2 tsp. ground cinnamon, a splash of vanilla, and in lieu of nuts, a heaping tbsp. of poppy seeds. I also added 4 oz. of plain applesauce (one of those individual cups). I used a Breadman Rapid Deluxe machine, which does not allow you to stop and then bake. Instead, I used the 1 pound setting and the "fruit/nut bread" option. It takes about 3 hours and 15 minutes to produce the loaf, but it mixes and stops and mixes and stops: the actual baking part is about an hour long. The banana bread had a more cakelike than breadlike texture (due to the addition of the applesauce) and was very dense, but oh so good! I love the ease and convenience of this recipe and I will use it often. A word of caution: use a rubber spatula to scrape the corners during the mixing phase to integrate all of the flour (be careful of the machine's mixing paddle), or some of the dry ingredients may get stuck in the corners of the pan. I have made this bread several times. The results have been great each time, and it taste just like a cake. I’ve received positive reviews about this bread from others. My only suggestion is to add the chips after the liquid ingredients, as they melted when I added them with the dry ingredients the first time I made this bread. Excellent! I could tell from the recipe that there would not be enough filling without the walnuts and since I planned to omit them I too doubled the cinnamon/sugar mixture. When baked and thickly sliced the texture of this bread is smooth and soft the sticky cinnamon-spicy sweetness oozes out and it creates the perfect ratio of bread to filling. Optional – If you want to make bread machine banana nut bread, you can add 3/4 cup of chopped walnuts to this recipe after the first bread machine mixing cycle and before the second mixing (final mixing). I like to add the chopped walnuts after the first mixing and before the final (second) mixing in order to minimize any mixing “breakage” of the chopped walnuts.
