This is a delicious and super easy way to bake banana bread. I used my Oster brand bread machine on the quick setting and it baked the bread perfectly. About halfway through the baking time I sprinkled some chocolate chips and nuts on top to make it look pretty. Next time I’m going to try using brown sugar instead. I think that would provide a bit of extra flavor and moisture to the loaf.

I used this recipe in the oven and not the bread machine and it turned out great. I mixed the bananas, egg, oil together, then added the sugar and baking soda/powder (mix very well to get slightly fluffy). (I usually use more than the suggested # of bananas, by at least 1/2 extra banana) Then added all that to a larger bowl with the flour and some cinnamon. Baked for 40ish minutes at 350-375 (depending on your oven). Took it out when the toothpick came out clean. I also added blueberries to the mix. Very tasty. Light and Fluffy.

Have an older style bread machiene. Sunbeam. Epic fail. Chose ‘sweet option’ and ‘rapid’ and ‘medium’ after what seemed like 2hrs of prepping,rising etc. it finally started baking. While the outsides of bread were great,it left a big liquid hole in the middle and top. It has a ‘bake delay’ setting but can only be used b4 starting cycle. Excellent! I could tell from the recipe that there would not be enough filling without the walnuts and since I planned to omit them I too doubled the cinnamon/sugar mixture. When baked and thickly sliced the texture of this bread is smooth and soft the sticky cinnamon-spicy sweetness oozes out and it creates the perfect ratio of bread to filling. The kids slathered their slices in homemade apple butter a friend gave us for Christmas but even plain this stuff is heavenly!

I added another egg and about 1/4 cup of olive oil and it came out awesome. I read some of the comments about it being dry. Tbh i thought reading the recipe they accidentally forgot to put oil on there. In all the other recipes i have done has about a 1/4 cup of either oil or softened butter. I added it anyways before venturing down to the comment sections when i put it in the machine.

When I first start making recipes with my bread machine, I did a little research and everything I could get my hands on said to use oil instead of butter (save the butter for the outside when you are eating it–not the inside when you are cooking it) and the reasons for it (can’t recall the reasons listed, but they made sense and I remembered the mantra!). I do use bread flour though.
Same thing happened to my first loaf. I thought I had done something wrong. I suspect bread machines vary. Mine heats while the ingredients are mixing. I suspect that is why the chocolate chips melted. My loaf was underdone and caved in the middle. As if a hunk of mashed banana didn’t mix completely. I’m really assuming the castropy happened because of the bread machine. It did smell amazing while cooking. I wanted to throw my loaf out as well but hate wasting food. Simply; I gave it to someone else. Made it again the old fashioned way… In the oven. Better result.

I have used this same recipe for years, except I use 3 Tablespoons of oil instead of the melted butter. I am going to try the butter once and see if I like it better. One thing for the person who thought the bread was tasteless is make sure you are using ripe bananas, the blacker the better! I have an Oster machine and it does not have a quick bread setting. What I do is use the dough setting and mix for 5 minutes using a rubber spatula to get the flour off the sides of the pan, and then press bake and bake it for about an hour and ten minutes.I then take the pan out of the machine and let the bread set for about 10 minutes before taking it out of the pan. I have made at least 100 loaves of this bread and everyone loves it!
Oh my goodness this turned out DIVINE. I had some friends over, one of who is a bit of an instagram celebrity when it comes to baking, and she was very impressed! Absolutely delicious – I think next time I will try less sugar (as I used two black bananas so sweet enough), and try add some vanilla as someone suggested above. My only slight imperfection was that their seemed to be a pooling of choc chips in the corners. Will try do a swoop with a spatula prior to the baking part next time. Thanks

Oh rats! I believe it’s because you chose the “sweet bread” setting instead of the “quick bread” setting, Kindra. I did some googling and found this: “The sweet cycle on most bread makers is designed to prepare and bake sweet yeast breads. Don’t get it confused with the quick bread cycle, however. Quick breads don’t contain yeast, so they cook at a different pace, and require no rise time. An example of a quick bread would be something like a banana bread or zucchini bread, without yeast.”

I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them.

Just to add some info I found interesting. When they call for using Quick Bread setting .. that is NOT Super Rapid cycle which is for breads with shorter rising times. However, you can use the Cake cycle which is used for NON - Yeast Breads. I am about to try a recipes that calls for all the same above ingredients except it has 1/3 melted butter and 1/2 cup milk, 1/2 cup nuts , 1/2 cup chocolate chips., only 2 Bananas. and 1/2 tsp salt. Hope it works.
