I’m glad you liked it, Alyssa, and that it turned out well for you. I’m always surprised too, when a recipe that works well for me doesn’t work well for others. I have to think that people perhaps make alterations to the recipe or don’t follow the instructions (even if they *think* they did). I feel bad for low-rating this recipe, because I did change it...I doubled the filling as others suggested, and used 1tsp of bread machine yeast as that was the conversion for instant yeast vs. active dry yeast. I'm not sure where I went wrong, but my dough didn't rise and I basically ended up with 2 cinnamon roll logs. They didn't taste terrible, but it would've been nice if they had some more air in them.

I have made this bread several times. The results have been great each time, and it taste just like a cake. I’ve received positive reviews about this bread from others. My only suggestion is to add the chips after the liquid ingredients, as they melted when I added them with the dry ingredients the first time I made this bread. The bread came out dark, but it was still good.

When baked and thickly sliced the texture of this bread is smooth and soft the sticky cinnamon-spicy sweetness oozes out and it creates the perfect ratio of bread to filling. I’m SO happy with this recipe. Have tried others that didn’t cook all the way through. But this turned out fluffy and moist! My substitutions worked out great- packed brown sugar and Bob’s Red Mill 1 to 1 Gluten Free baking flour. I was nervous about not using bread flour but it turned out wonderfully on the cake setting for 1:40. Will be making again! Only thing I’ll slightly tweak next time is opening up my bread machine during mixing to scrape some of the flour off the sides to make sure it all incorporates since I had a little bit of flour on the sides of the bread. Not a big deal at all though, still very tasty! Thank you.

Indescribably delicious! I usually make banana bread by hand, so I was a touch skeptical about using the bread machine, but it came out dense and golden and smelled wonderful while baking. I began with the recipe Dee provided, then I added an extra banana, 1/2 tsp. ground cinnamon, a splash of vanilla, and in lieu of nuts, a heaping tbsp. of poppy seeds. I also added 4 oz. of plain applesauce (one of those individual cups). I used a Breadman Rapid Deluxe machine, which does not allow you to stop and then bake. Instead, I used the 1 pound setting and the "fruit/nut bread" option. It takes about 3 hours and 15 minutes to produce the loaf, but it mixes and stops and mixes and stops: the actual baking part is about an hour long. The banana bread had a more cakelike than breadlike texture (due to the addition of the applesauce) and was very dense, but oh so good! I love the ease and convenience of this recipe and I will use it often. A word of caution: use a rubber spatula to scrape the corners during the mixing phase to integrate all of the flour (be careful of the machine's mixing paddle), or some of the dry ingredients may get stuck in the corners of the pan. Making this right now in my Hamilton Beach model# 29882 machine. Luckily I was watching as it starting mixing because the egg/banana/milk slurry was just spinning in the center while most of the flour was staying put on the edges! I helped it along with a rubber spatula and it mixed just fine, but seems awfully wet. The baking cycle is beginning now… Fingeres crossed!

Same thing happened to my first loaf. I thought I had done something wrong. I suspect bread machines vary. Mine heats while the ingredients are mixing. I suspect that is why the chocolate chips melted. My loaf was underdone and caved in the middle. As if a hunk of mashed banana didn’t mix completely. I’m really assuming the castropy happened because of the bread machine. It did smell amazing while cooking. I wanted to throw my loaf out as well but hate wasting food. Simply; I gave it to someone else. Made it again the old fashioned way… In the oven. Better result.

I know I have a winning recipe on my hands when my husband and 3 year old start snacking on it as soon as its cool enough to handle and immediatly ask me to make it again soon. This bread turned out so well, just like a cinnamon roll in loaf form. I don't have a bread machine so I did have to adjust the directions for use in my stand mixer. I combined the white sugar and warm milk in my mixer bowl and added the yeast to proof. Once proofed I mixed in the eggs and softened butter until the butter was broken up into chunks and the eggs were mixed in. I then added the flour/salt that had already been mixed to combine. I let the dough hook do all the kneading and when finished I lightly oiled the bowl and the top of the dough, covered with plastic wrap and let it rise until doubled. From that point on I followed the recipe except for doubling the sugar/cinnamon part of the filling. I made one loaf with walnuts and one without since my husband isn't crazy about them. We can't wait to try this bread toasted tomorrow morning. The only change I'll make next time is to brush the dough with an egg wash before baking so it comes out nice and glossy. Highly recommend!
Homemade banana bread will last only 1 or 2 days on the counter (and it will spoil even faster in a hot & humid environment). After baking and when the banana bread is completely cooled, you can store it on the counter in a large resealable plastic bag or an airtight container. You can also place a paper towel around the bread in order to absorb any extra moisture.
Bread machine banana bread generally involves less work & steps than an oven-baked banana bread. A bread machine will mix the ingredients for you and bake the banana bread for you in the same machine. I used this recipe in the oven and not the bread machine and it turned out great. I mixed the bananas, egg, oil together, then added the sugar and baking soda/powder (mix very well to get slightly fluffy). (I usually use more than the suggested # of bananas, by at least 1/2 extra banana) Then added all that to a larger bowl with the flour and some cinnamon. Baked for 40ish minutes at 350-375 (depending on your oven). Took it out when the toothpick came out clean. I also added blueberries to the mix. Very tasty. Light and Fluffy.

Oh my goodness this turned out DIVINE. I had some friends over, one of who is a bit of an instagram celebrity when it comes to baking, and she was very impressed! Absolutely delicious – I think next time I will try less sugar (as I used two black bananas so sweet enough), and try add some vanilla as someone suggested above. My only slight imperfection was that their seemed to be a pooling of choc chips in the corners. Will try do a swoop with a spatula prior to the baking part next time. Thanks

If you have at least 4 pieces of leftover cinnamon-raisin bread, why not make French toast? In a shallow bowl, beat 2 eggs with 1/2 cup milk. Heat a frying pan with a little butter. Dip each slice into the egg mixture, making sure to coat both sides of the bread. Place each slice in the heated pan. Cook for a couple of minutes, or until cooked and lightly toasted, and flip. Serve your French toast warm with slightly heated maple syrup.
